I followed the instructions as written but used my Breville Smart Oven on the air fryer setting using a sheet pan lined with a silicone baking sheet and I dried the soaked sweet potato strips on the sheet pan for a minute or two in my preheating oven instead of patting them with a paper towel.  

I&#039;m going to try the same technique (soaking, drying, dusting of cornstarch) with russet potatoes.]]></description>
