HI RoseMarie

Yes, you could substitute the spinach or add fresh zucchini to this quiche! You&#039;ll want to first shred the zucchini using a grater or a food processor. Then be sure to squeeze the shredded zucchini to remove as much water as possible. I usually do this by placing the zucchini in a linen towel, and then wringing it into a ball, while squeezing it to remove all the excess liquid.

					<description><![CDATA[I have now made this 3 times and it is the best quiche ever. So easy to make and I serve it with a nice tossed salad for dinner. It cuts so easily so you can make smaller wedges for appetizers or as company bits with wine. I like it more that the usual crust quiches. Who needs dough?]]></description>
