For this particular recipe-I use regular brown sugar-its a small amount but it helps feed the yeast.

Yes, you bet! These pretzel bites freeze well for up to 3 months. Thaw overnight in the refrigerator and reheat in the oven at 350 degrees for 8-10 minutes
