That sounds so delightful. I will have to try this over watermelon chunks! Yes, I have frozen a batch and it freezes well. Just place in the fridge overnight to thaw.

Been making this, or a variation of it for years and my family and friends love it. Goes really well over watermelon chunks in the summer.
I only use pineapple and Mandarin oranges, no bananas. Do you know if this can be frozen?

Here’s a tip: toss your banana slices in lemon or lime juice before mixing them into your salad. They will not brown!
