This is a great recipe that is so versatile. It’s great as is, but I’ve also used apples, pumpkin, banana and chocolate chips. All versions work great. I make a batch every week.

Has anyone tried making this recipe without the egg (either using more applesauce, egg replacement with chickpea flour/chia/flax seed, etc.)? Would appreciate any tips!

First off I want to say thank you for your delicious recipes, I just made these one point blueberry muffins they were absolutely delicious, I used Trader Joe’s protein pancake mix and Truvia packet sweetners until I filled the quarter of a cup and it worked very well, my batter did not fill 3/4 of the muffin tins and I was worried but I think because maybe it needed a little more water, they were truly delicious and did rise to the top of the muffin tin and they were nice and light, I used frozen blueberries it was a pain to defrost them and keep drying them I also sprinkle done with the flour like you said, next time I will use fresh blueberries, they were absolutely delicious and perfect and very filling because of the protein mix, I did scan the Trader Joe’s protein mix and it did come out to one point per muffin, they do need to sit five minutes or longer after they are done even though I used the silver muffin liners they will stick if you try to remove them right away like I did lol, the second one I let it sit for a while and it did come off fairly easily, thanks again for creating these delicious recipes for us I truly appreciate you, have a blessed day.
