Ingredients:

  • 1 scoop or 1 sample packet of Angel Food Cake Devotion Nutrition protein powder or 1/4 cup any protein powder that is specifically made for baking/cooking with
  • 1/2  tsp pumpkin spice ( I use Dak’s Pumpkin Spice)
  • dash of cinnamon
  • 1 egg or 2 egg whites 
  • 1/2 tsp baking powder
  • 1/3 cup water
  • 2 Tbsp canned pumpkin
  • 2 Tbsp Mrs. Butterworth’s sugar free syrup
  • 4 Tbsp fat free Reddi Whip

Directions:

  1. Mix protein powder, egg or egg whites, pumpkin, pumpkin spice, cinnamon, baking powder, and water in a mixing bowl.
  2. Mix well with a fork or wire whisk.
  3. Pour batter into a lightly greased waffle iron.
  4. Top waffle with 3 Tbsp sugar free Mrs. Butterworth’s syrup, additional cinnamon, and 3 Tbsp fat free Reddi Whip for 0 Freestyle Smart Points

1 cup any protein powder that is specifically made for baking/cooking with 2 tsp pumpkin spice 1 tsp cinnamon 2 eggs or 2 egg whites  1 tsp baking powder 1/2 cup water 1/3 cup canned pumpkin

This will make 4 waffles. The point value may vary depending on the brand of protein powder you use.

Can somebody tell me what I am doing wrong? I made these last night and they didn't turn out good. I even bought the same waffle maker! I followed the recipe exactly (except I used Quest protein)...1/2 of the batter puffed up and overflowed the waffle maker and the top and bottom of the waffle were crispy shells with a hollow inside. I'm having trouble with this waffle maker constantly overflowing also...even when I use their included measuring cup. Please, any suggestions would be appreciated...

I made the waffle last Tuesday and mine did the same thing. It started overflowing the sides and then when I checked to see if it was done, it was sticking and then after a few more minutes it just wouldn't come out as a waffle - it was more like a deconstructed one....the taste was great. I did make pancakes out of the recipe which were yummy.
