					<description><![CDATA[Great recipe. But I recommend that you strain the yogurt 24 hours in the fridge first. I have two small strainers yogurt strainers and I strain them over small containers. I dump out the whey that accumulates. Even for greek yogurt, it will still strain quite a bit of whey. If you do this, the cheesecake comes out of the oven with the perfect consistency.  I then put it in the fridge with parchment paper on top which absorbs whatever small amount of whey might remain. People can&#039;t get over how much it looks and tastes like cheesecake! and it stays in the same consistency for days.]]></description>

@Carolityn,  Raspberry sounds yummy. I sometimes use Trader&#039;s Joes reduced Sugar Raspberry preserves as a topping.  1 Tbs is 1 pt. 
Consider buying fresh raspberries and cooking them with a little monkfruit and water to make a topping.]]></description>
