- 1 scoop Salted Caramel Quest Powder or one sample packet if you have the single servings size. ( you can purchase the Quest Protein Powder from the products page on my blog through Amazon)
- 1 tsp baking powder.
- 1 egg
- 1 tsp caramel extract(or you can use vanilla extract as a substitute)
- 1 Tbsp non fat Greek yogurt
- 2 Tbsp Pumpkin Purée or 2 tbsp unsweetened applesauce
Preheat oven to 350.
In a mixing bowl, combine protein powder, egg, caramel extract, yogurt and pumpkin purée mix well.
Scoop batter onto a lined parchment cookie sheet. Spacing them out to make 10-12 cookies. Cook at 350 degrees for 8-10 min. Let them cool for 5 min before using them.
💥Combine 2 tsp sugar free vanilla pudding mixed with 1 Tbsp non fat Greek yogurt and dash of caramel extract syrup and 1-2 tsp of hot water to thin out. Pour over cooked cookies and add sprinkles.
For chocolate icing add: 💥1 tsp of unsweetened dark Hershey Cocoa Powder and add sprinkles.
