Skinny Cherry Dr Pepper Chocolate Cake

Just because you may be on a wellness journey doesn’t mean you need to deprive yourself of cake or dessert on those special occasions. You can enjoy a serving of this delicious Skinny Cherry Dr. Pepper Chocolate Cake!!

How do I make this Skinny Cherry Dr Pepper Chocolate Cake?

Preheat oven to 350F.

Spray a 9×13 baking dish with non stick cooking spray. Then set aside.

In a large mixing bowl combine, the cake mix, eggs and soda. 

Whisk until well combined.

Cut 15 maraschino cherries in half and fold them into the batter.

Pour the cake batter into the prepared baking dish.

Bake for 22-24 minutes or until a toothpick comes out clean.

Meanwhile,

in a small mixing bowl combine cool whip and sugar free cherry jello together. 

Mix until jello is well combined

In a separate bowl combine, skim milk and pudding mix. Whisk until pudding mixture thickens.

 Combine cool whip mixture with pudding mixture. Whisk until well combined. 

Remove cake from oven and allow to cool for 20-30 minutes.

Spread the cool whip frosting evenly over the cooled cake.

Cut the remaining 10 cherries in half and sprinkle evenly on top of the frosting. 

Place in the fridge until ready to serve. Using a knife, cut into 15 equal slices.

  • If you can’t locate Diet Cherry Dr. Pepper, you can use 12 oz. Cherry Coke Zero or Diet Coke mixed with 1/2 tsp cherry extract.

Curious to if you have ever made this with orange flavor instead of cherry? All I have on hand is coke zero and orange sugar free jello. I love orange and chocolate flavor together so I think it would taste great, going to try it soon!

Hi Lindsay-

Thank you for your delicious low point dessert recipes. I made this for my husband’s birthday today and he LOVED it. It was super easy to make. I, like many others, could not find the cherry Dr. Pepper, but I just used a can of regular Diet Dr. Pepper and it turned out great! I will be making this again, judging by my husband’s reaction! (He also loves your Banana Muffins and the Raspberry Lemon muffins! Who am I kidding... I love them all too!) Kate
