I’m in Texas and we are looking for a freeze this weekend. With that comes some chili, of course. Ive been wanting to try this recipe so I just now did to go with the chili tonight and BOY IS IT A HIT!!! I am going to have to make another pan since the fam devoured this one immediately … It really is good… The taste and texture reminds me of the cornbread from scratch my mom used to make back in the day…. it is a keeper, thank you for all you do.

I once made a skinny cornbread recipe that turned out flat and disgusting. Not this one! This one is really good. I halved the recipe and baked it in a 9in round cake pan. Kept checking on it after 20 minutes to see when it was done. I would add extra monk fruit sweetener next time, as I like a sweeter cornbread. It’s so great to have cornbread back on the menu without spending a ton of points! My family eats a lot of beans, soup, and chili. Pound dropper saves the day again!

So good! Left out the vanilla and added just a tablespoon of erythritol. Also lazy and just mixed the whole eggs in. Perfect! Cooked in the air fryer at 320 for 15 min. Had to flip in the pan and cook for another 12; could have gone for another minute or two. It’s a starting point. Will probably try in silicon muffin cups in a cake pan in the af next. Hubby even liked it, alot! He sneered at the “Skinny” part of the recipe when he saw what I was making 🙂

So yummy!! I took mine out after 22 minutes as the toothpick was already coming out clean. It was perfect!! Family agreed these do not taste “diet” at all! Thank you!

SO DELICIOUS!! I love cornbread and thought it was out of my life with WW! I substituted 4TBSP of unsweetened applesauce in place of the butter and threw in a can of creamed corn, but I’m convinced it would’ve been just as delicious without those changes.

I made these as muffins for lunch today to go with the chili my sister-in-law made for the group that was helping them load a moving truck. My sister-in-law came back for a second one and my sister said they’.d take the left overs with them. I saw that as a definite thumbs up. Fortunately I still have some at home to stick in the freezer.
