Skinny Shepherd’s Pie

This Skinny Shepherd’s Pie is one of my husband’s favorite dishes! A true comfort food-delicious, filling and a meal the whole family will love!

What veggies can I use in this Skinny Shepherd’s Pie?

My husband and kids loves green beans-so when I make this Shepherd’s Pie I use two cans of green beans. However, you can substitute the green beans for two cups of your favorite canned or frozen veggie. Feel free to use a combination of mixed veggies. 

Just make sure to thaw the frozen veggies out prior to spreading them into the bottom of the baking dish-otherwise it will become runny when the vegetables start to defrost while cooking.

How do I make this Skinny Shepherd’s Pie?

To make this Skinny Shepherd’s Pie you will:

Spray a 9 x 9 baking dish with non stick cooking spray. Drain green beans.

Spread green beans or thawed veggies evenly on the bottom of the baking dish.

Preheat oven to 350 degree.

Spray a skillet pan with non stick cooking spray and cook lean ground beef over medium-high heat.

Stir occasionally until meat is cooked through, about 7-8 minutes. Set cooked meat aside.

In a small mixing bowl combine, tomato soup and cooked ground beef. Stir until combined

 Pour meat mixture over the green beans and spread evenly over the green beans.

Microwave the mashed potatoes in the original package for 2 minutes until soft.

Remove from microwave.

Top the meat mixture with mashed potatoes starting at the corners working around the edge.

This should seal in the meat.

Sprinkle cheese over the top of the mashed potatoes 

and cover with aluminum foil.

Bake for 20-22 minutes and then remove aluminum foil and

bake for another 5 minutes or until cheese melts.

 

Ingredients:

  • 2 (14.5 oz) cans green beans or 2 cups no starchy mixed vegetables, thawed
  • 1 (10.75 oz) tomato soup, condensed
  • 20 oz. refrigerated or homemade mashed potatoes 
  • 12 oz.  96 % lean ground beef or you can use ground turkey  ( I use Laura’s 96% Lean Ground Sirloin
  • 3/4 cup light cheddar cheese ( I use Velvetta shreds or Trader Joe’s 3 lite cheese blend)

Directions:
