Strawberry Shortcake Waffle

Ingredients:

  • 1 scoop Devotion Nutrition Angel Food Cake protein powder (one sample packet is equivalent to one scoop) you can also use any other 100 calorie per serving protein powder 
  • 1/2 tsp baking powder
  • 1 egg
  • 1/3 cup water
  • 1/2 tsp almond extract or vanilla extract
  • Fresh strawberries

Directions:

  1. In a mixing bowl combine protein powder, egg, baking powder. water, and extract and mix well using a small wire whisk.
  2. The batter should be on the thinner side. But not toot thin. (Too much water will make the batter over flow.)
  3. Spray waffle iron with non stick cooking spray, add pour batter into waffle iron.
  4. Slice strawberries and top with sugar free syrup and fat free Reddi whip if desired.

Servings: Makes one waffle for 1 Freestyle SmartPoints® point.

Notes:

  1. This recipe can also be used to make 3 small pancakes.
  2. I added 4 Tbsp fat free Reddi Whip, 1/4 cup Mrs Butterworth’s sugar free syrup and dash of cinnamon for one additional point.

Can any protein powder be used?

Hi Amber

Not all protein powders can handle high heat. I recommend Devotion or Quest protein powder-unless the another protein powder specifies if it can be used for baking/cooking. ( It would say it on the packaging)
