Frozen Yogurt Bark with Fruit

This Frozen Yogurt Bark with Fruit is simple to make and so refreshing! Made with non fat creamy plain or Greek yogurt, Lakanto monk fruit sweetener, vanilla, and fresh fruit. This makes for the perfect summertime snack or treat!

Ingredients

  • 1 (32 oz.) container nonfat plain or Greek yogurt- (I use Chobani or Fage)
  • 1 Tbsp pure vanilla extract 
  • 3 cups fruit or berries, cut into bit size pieces 
  • 1 Tbsp white granulated sugar sweetener-optional. ( I use Lakanto Monkfruit Classic Sweetener)
  • 2 Tbsp sweetened coconut flakes-optional. ( I use Kroger sweetened coconut flakes)

Instructions

      1. In a large mixing bowl combine yogurt, vanilla extract, and sugar sweetener together. Stir until well combined.
      2. Fold in 1/2 the bite sized fruit pieces.
      3. Line a baking tray with parchment paper and pour the yogurt mixture on top. Spread evenly to approx 1/2 inch thick.
      4. Sprinkle the top with remaining fruit pieces, coconut flakes, and any other desired toppings.
      5. Place in the freezer for 3 hours or until it is completely frozen.
      6. Remove from the freezer. Use a pizza cutter or your hands to break or cut into pieces.
      7. Leftovers can be stored in an air tight container in the freezer for up to 2 months.
