Ingredients

  • 1 ( 1 oz.) package instant sugar free vanilla or butterscotch pudding mix
  • 3 Tbsp skim milk or unsweetened almond milk 
  • 1 ( 15 oz.) can 100% pumpkin purée 
  • 1 and 1/4 tsp pumpkin pie spice
  • 1 ( 8 oz.) container fat free cool whip topping, thawed

Instructions

    1. In a large bowl, mix together instant sugar free vanilla pudding mix, skim milk, pumpkin purée, and pumpkin pie spice. 
    2. Fold in the thawed fat free cool whip topping. Chill for at least an hour in the refrigerator.
    3. Serve as is or with sliced apples, sliced bananas, pretzels, graham crackers, or Anise Reko Pizzelles, if desired.
