These Greek Chicken Meatballs with tzatziki sauce are exactly what you need in your life. They are crispy on the outside and juicy in the middle!

Ingredients

  • 1 lb. 99% lean ground chicken
  • 1/3 cup plain or Italian breadcrumbs
  • 1/4 cup crumbled fat free feta cheese or parmigiano-reggiano
  • 1 large egg
  • lemon zest from 1/2 lemon
  • 2 cloves garlic, minced
  • ½ tsp salt
  • ½ tsp dried oregano
  • 1/2 tsp dried dill
  • ½ tsp onion powder
  • 1 tsp dried parsley or 2 Tbsp fresh, finely chopped

Instructions

    Oven Directions:

    1. In a large mixing bowl, combine the ground chicken, breadcrumbs, egg, parmesan or feta cheese cheese, lemon zest, garlic, salt, onion powder, oregano, dill, and fresh parsley.
    2. Mix all together using your hands.
    3. Using your hands, gently form into golf ball-sized meatballs-about 1 Tbsp.
    4. Preheat the oven to 400 degrees.
    5. Line a baking sheet with parchment paper, or spray a baking dish with nonstick cooking spray.
    6. Place meatball on prepared baking sheet. Spray the tops of the meatballs with cooking spray.
    7. Bake meatballs for 18-20 minutes or until they are lightly browned.


    Air Fryer Directions:

    1. In a large mixing bowl, combine the ground chicken, breadcrumbs, egg, parmesan or fat free feta cheese, lemon zest, garlic, salt, onion powder, oregano, dill, and fresh parsley.
    2. Mix all together using your hands.
    3. Using your hands, gently form into golf ball-sized meatballs-about 1 Tbsp.
    4. Place them on a prepared air fryer tray or basket and spray with cooking spray.
    5. Air fry at 375 degrees for 15 minutes, or until they are lightly browned.
    6. Meanwhile, prepare tzatziki Sauce: In small bowl, stir together all ingredients.
    7. Garnish meatballs with fresh parsley and serve with tzatziki sauce.

Notes

How long do these meatballs stay fresh for? Can I freeze them?

Store these in an airtight container in the fridge for up to 3 days or you can freeze the leftovers for up to two months.

Zero Point Tzatziki Sauce Recipe:
1 cup nonfat plain Greek yogurt
1 Tbsp lemon juice
1 garlic clove or 1/2 tsp minced garlic
1 English cucumber-the long, skinny ones
1 tsp salt
1 tsp fresh or dry dill

Directions:
In a bowl combine, non fat plain Greek yogurt, lemon juice, garlic clove or minced garlic, salt, and dill.
Using a hand grater, grate English cucumber onto a plate. After cucumber is grated, lightly squeeze the grated cucumber between your palms over the sink or garbage to remove excess liquid.
Then transfer the squeezed cucumber to the yogurt mixture. Stir until all ingredients have been incorporated.
Refrigerate for at least 30 minutes before serving.
