One Pot Tortellini with Italian Turkey Sausage

This One Pot Tortellini with Italian Turkey Sausage is an easy dinner idea made all in one pan for easy cleanup. It's family friendly, quick and easy-and irresistibly delicious!

Ingredients

  • 1 small yellow or white onion, diced
  • 4 cloves garlic, chopped
  • 16 oz. Italian chicken or turkey sausage
  • 1 ( 28 oz.) can crushed tomatoes
  • 19 oz. frozen or refrigerated tortellini- I use Great Value cheese tortellini
  • 1/3 cup fat free half & half
  • 3 cups baby spinach, stems off and torn
  • Optional garnish: grated Parmesan cheese, chopped fresh parsley or basil

Instructions

    1. Spray a large skillet or Dutch oven with non stick cooking spray. Heat over medium heat until hot. Add onion, and continue cooking for 1 minute.
    2. Add garlic and stir for another 2 minutes. 
    3. Add Italian turkey or chicken sausage. Stir and crumble the sausage into bite size pieces. Continue cooking until sausage is browned. Drain the fat and leave the sausage in the pan.
    4. Stir in crushed tomatoes and tortellini and bring to a simmer. 
    5. Cover and simmer until tender, about 5-7 minutes. Turn off heat and stir in fat free half and half and torn spinach.
    6. Let it sit for 3-5 minutes to allow the spinach to wilt and the sauce to thicken. 
    7. Serve warm and garnish with fresh parsley, basil, or Parmesan cheese, if desired.

Notes

  • If you wanted you could use 1/4 cup non fat plain Greek yogurt mixed with 1 Tbsp milk of your choice, as an alternative for the fat free half & half.
