This Skinny Spaghetti Soup is spaghetti like you've never had before. A hearty soup that is comforting and filling! It's everything you love about spaghetti in soup form: lean ground beef, Italian seasonings, and spaghetti noodles all simmered in a rich and savory tomato broth.

Ingredients

  • 1 lb. 96% lean ground beef 
  • 1 large onion, diced
  • 6 cloves garlic, minced
  • 4 cups low sodium beef broth 
  • 2 (14.5 oz.) cans fire roasted or stewed diced tomatoes
  • 1 (29 oz.) can tomato sauce
  • 1 Tbsp Italian seasonings
  • 1 tsp white granulated sweetener 
  • 1/4 tsp red pepper flakes 
  • Kosher salt and black pepper, to taste
  • 6 oz. Barilla Plus spaghetti noodles, broken into thirds
  • Fresh basil, optional garnish
  • Parmesan cheese, for optional garnish

Instructions

  1. Spray a large pot with nonstick cooking spray and cook over medium to high heat. 
  1. Add the ground beef, onion, and garlic. Cook until ground beef is browned and onions are tender. 
  2. Add remaining ingredients except for spaghetti noodles, Parmesan, and fresh basil. Bring to a boil over high heat.
  3. Add broken spaghetti noodles and cook until noodles is al dente. Serve warm. Garnish with fresh basil and Parmesan cheese, if desired.
  4. Store leftovers in an airtight container for up to a week. If soup has thickened simply add more beef broth and reheat in the microwave.
