We’re talking about Easy Tortellini Italian Pasta Salad—perfect any time of year but especially perfect for summertime. This Easy Tortellini Italian Pasta Salad is perfect for any occasion. It’s easy to make and refreshingly light, so you can serve up a big bowl without feeling like you’re going to faint after eating it.
Loaded with veggies and protein like pepperoni, tomatoes, cucumbers, olives, and pepperoncini (don’t worry if those aren’t your thing—they’re optional!), this salad is full of flavor and texture. Plus, it’s super colorful!
What ingredients do I need to make this Easy Tortellini Italian Pasta Salad?
- Cheese tortellini- I like to use the Great Value cheese tortellini from Walmart.
- Sliced black olives-drained
- Turkey pepperoni or mini pepperoni -sliced and quartered if using turkey pepperoni
- Red onion-diced
- English cucumber-chopped
- Banana peppers or pepperoncinis- chopped
- Cherry tomatoes-halved
- Light or fat free Italian dressing or homemade Italian dressing– we like the light Olive Garden dressing or a homemade Italian dressing. Click HERE for the homemade recipe.
- Parmesan- shredded (optional garnish)
What other vegetables can I add to this Easy Tortellini Italian Pasta Salad?
You can add or replace different vegetables such as:
- Zucchini, chopped
- Green, red or orange bell pepper, chopped
- Broccoli, chopped
- Carrots, matchstick
- Edamame, unshelled
- Asparagus, chopped

How do I make this Easy Tortellini Italian Pasta Salad?
Cook tortellini to al dente according to package directions. Rinse with cold water and drain.
Add cooked pasta to a large mixing bowl. Pour half the dressing onto the cooked pasta, this will help to ensure the tortellini doesn’t stick to each other.
Add olives, pepperoni, red onion, cucumber, pepperoncini, and tomatoes in a large mixing bowl or serving bowl.
Pour remaining dressing over salad and stir to combine.
Cover and refrigerate for at least 1 hour.
When you are ready to serve, add shredded parmesan. Toss until well combined.
Note: The tortellini will soak up most of the dressing. You may add additional dressing just before serving.
Serve cold.

- 15 slices turkey pepperoni, sliced and quartered or 2 oz. mini pepperoni
- 1/2 cup red onion, diced
- 1 large English cucumber, diced
- 1/4 cup banana peppers or pepperoncinis, chopped
- 1 1/2 cup cherry tomatoes, halved
- 1 cup light or fat free Italian dressing or THIS homemade dressing. If you like to use a store bought one-we love using the light Olive Garden Italian dressing.
- 2 Tbsp Parmesan, shredded
Directions:
