What ingredients do I need to make this Lightened Up Pear Bundt Cake?

  • Fresh or Canned Pears-chopped or diced.
  • White granulated sugar substitute – I use Lakanto classic monk fruit sweetener 
  • Large eggs
  • Unsweetened applesauce 
  • Vanilla extract
  • Light butter– melted
  • Kodiak Cakes Power Cakes Whole grain buttermilk protein packed flapjack and waffle mix or you can use all-purpose flour, the point value will be lower if using Kodiak Power Cakes Mix. You could also use gluten free flour, as a gluten-free option.
  • Salt
  • Baking powder-increase the amount of baking powder if you use all purpose flour or gluten-free flour
  • Ground ginger
  • Ground cinnamon
  • Ground nutmeg
  • Ground cloves

What sweetener do you recommend using for this Lightened Up Pear Bundt Cake?

I use Lakanto Classic Monkfuit Sweetener and Lakanto Golden or Brown Monkfruit Sweetener in my baking recipes. The Classic is a zero point white granulated sugar substitute and the Brown or Golden is a zero point brown sugar substitute.

Can I switch out the pears for a different fruit?

You sure can. Feel free to use your favorite fruit such as:

  • Canned crushed pineapple
  • Canned mandarin oranges
  • Apples, peeled and cubed

How do I make this Lightened Up Pear Bundt Cake?

Preheat oven to 350 degrees. Spray a 10 inch Bundt pan or a 9×13 baking dish with nonstick cooking spray. Set aside. 

In a medium mixing bowl combine sweetener with diced pears and mix together.

Add the eggs, unsweetened applesauce, vanilla and melted light butter. Mix until well combined. 

In a separate large bowl whisk together the kodiak power cake mix or the all purpose flour, salt, baking powder, ground ginger, ground nutmeg, cinnamon, and cloves. 

Combine the wet ingredients to the dry ingredients. Whisk until all ingredients are wet or JUST combined. Do not over mix! 

Note: Over mixing the batter will cause the cake to be very dense and dry!

Pour batter into prepared bundt pan.  

Bake for 40-50 minutes or until a toothpick inserted in the middle comes out clean and the cake is a lightly golden brown color.

Cool for at least 15 minutes and remove from pan. Let cool.

Drizzle the cake with the optional icing, if desired.

  • 1 tsp vanilla extract

Combine the optional icing ingredients mixing well and then drizzle over cooked cake.

  • 2 Tbsp light butter, melted

  • 1/4 tsp salt
  • 1 tsp baking powder-if using all purpose flour or gluten free use 2 tsp baking powder
  • 1/2 tsp ground ginger
  • 1 tsp ground cinnamon
  • 1/2 tsp ground nutmeg
  • 1/4 tsp ground cloves

This is delicious! I used no-sugar added canned pears that I diced myself, and baked in a 9x13 pan. I did not make the icing, instead I served this warm with some vanilla Halo Top. So good! I can see me making this often.
