What is Monterey Chicken?
Monterey chicken is marinaded chicken breasts smothered in tangy barbecue sauce, topped with cheese, bacon, and then garnished with diced juicy tomatoes and green onions.
The Monterey Chicken has been one of my favorite dishes from Chili’s restaurant. Unfortunately, my local restaurant no longer has it on their menu. So, if you’re like me and have been craving this dish…then this copycat recipe is for you! It’s identical to theirs and I’m confident it will be on repeat at your house!
What ingredients do I need to make this Monterey Chicken?
Marinate Ingredients:
- Soy sauce-marinating the chicken in soy sauce helps tenderizes the chicken so it’s nice and tender.
- Worcestershire sauce– for flavor.
- Minced garlic– for flavor.
Ingredients:
- Boneless, skinless chicken- thinly sliced
- Hormel precooked black label bacon – cooked in microwave for 60 seconds
- Sugar free bbq sauce -I use G. Hughes Sugar Free BBQ Sauce or Sweet Baby Ray’s sugar free BBQ sauce
- Reduced fat Monterey Jack cheese -I use Trader Joe’s lite 3 cheese blend
- Green onions -sliced and diced for garnish
- Diced tomatoes- for garnish
How do I make this Monterey Chicken?
In a ziplock bag combine all marinate ingredients and chicken breasts. Close bag and flip around until all ingredients are incorporated. Refrigerate for 2-4 hours.
Spray a cast iron skillet with nonstick cooking spray, and heat over to medium heat. ( I use THIS indoor grilling pan)
Place chicken breasts in a cast iron skillet and cook until chicken for about 5-7 minutes on each side or until the chicken is thoroughly cooked and golden brown on both sides. The internal temperature should reach 165°F.
After the chicken is finished cooking, cover each chicken breast with 1 tablespoon of sugar free barbecue sauce.
Top each chicken breast with the two slices of bacon. Sprinkle 1/2 ounce of cheese evenly over the chicken breasts, allowing the cheese to melt slightly.
Cook over medium heat and cover the cast iron skillet with a lid to allow the cheese to melt thoroughly and the toppings to warm through, about 2-3 minutes. Once the cheese is melted, carefully remove the chicken from the skillet.
Garnish with green onions and chopped tomatoes. Enjoy!
Store leftovers in an air tight container in the fridge for up to 5 days or in the freezer for up to 2 months. Just thaw it in the fridge overnight before reheating.
