This time of the year, I love making quick and easy slow cooker meals. This Slow Cooker Breakfast Tater Tot Casserole is packed with protein and makes for a hearty breakfast and will keep you satisfied for hours!
What ingredients do I need to make this Slow Cooker Breakfast Tater Tot Casserole?
- Diced ham– I like to use John Morrell. You could switch things up and use cooked breakfast sausage or cooked bacon crumbles.
- Frozen tater tots-divided
- Milk of your choice- I use Fairlife skim milk for added protein. Did you know 1 cup of Fairlife milk has 13 grams protein.
- Onion powder– for flavor
- Salt and black pepper- to taste
- Large eggs
- Reduced fat Cheddar cheese-shredded. Divided
- Green onions or fresh chives-thinly sliced for garnish
- Diced onions or bell peppers- optional, if desired.

How do I make this Slow Cooker Breakfast Tater Tot Casserole?
Spray a 6-quart slow cooker with non-stick cooking spray.
Place half of the tater tots into the bottom of the prepared slow cooker.
In a mixing bowl, whisk together the eggs, milk, onion powder, salt and pepper.
Stir in 1/2 cup cheese.
Pour the egg mixture over the tater tots.
Sprinkle the diced ham on top.
Add the remaining tater tots.
Cover and cook for 4 hours on low.
15 minutes before serving and 1/2 cup cheese and place the lid back on.
Garnish with chives or green onions.
Enjoy!
Store leftovers in an air tight container in the fridge for up to 4 days or freeze for up to 2 months.

Ha ha! I was VERY “naughty” when out last night and had poutine! How fitting that my first day back on track a recipe that would likely hit all the poutine “notes” shows up in my inbox! I think I’ll make this this week, with copious fresh fruit on my repentant side!
