What ingredients do I need to make these Copycat Taco Bell Cheesy Fiesta Potatoes?

  • Russet potatoes– you could also use diced frozen potatoes, thawed out
  • Oil- you can use olive oil or avocado oil or canola oil 
  • All purpose flour –gluten-free, if needed
  • Cornstarch– gives the potatoes that nice crispy texture
  • Taco seasoning- for seasoning  
  • Seasoned salt– for flavor
  • Tostitos cheese dip- warmed up 

Why do I add both cornstarch and flour?

Mixing the two gives the potatoes that extra crunchy texture. The flour adds a breaded texture while the cornstarch gives them that ultra crispness along with the breaded thicker crust!

Optional Toppings:

  • Fat free or light sour cream or nonfat Greek yogurt 
  • Finely sliced fresh chives
  • Sliced green onion
  • Sliced jalapenos
  • Diced tomatoes
  • Crumbles bacon pieces 

How do I make these Copycat Taco Bell Cheesy Fiesta Potatoes?

These can be cooked in the air fryer or oven.

In a medium mixing bowl combine diced potatoes and olive oil.  Toss until evenly to coat. 

Add all-purpose flour, cornstarch, taco seasoning, and seasoned salt. Toss to coat until seasoning is well blended with the potatoes. 

Spray the inside of the air fryer basket with cooking spray or use an air fryer basket liner. 

Place the potatoes into the basket in a single layer. Air fry at 375° degrees for 10 minutes. Depending on the size of your air fryer, you may have to work in batches. 

After 10 minutes shake the basket and continue cooking for another 10 minutes or until tender and crispy. Remove from air fryer. Serve warm. 

Top with 2 tbsp of warmed cheese sauce per serving, garnish with your favorite toppings, and enjoy!

  • 1 Tbsp cornstarch 
  • 1 Tbsp taco seasoning 
  • 1 Tsp seasoned salt
  • 8 Tbsp Tostitos cheese dip, warmed up

  5. Top with 2 tbsp of warmed cheese sauce per serving, garnish with your favorite toppings, and enjoy!
