Country Breakfast Hash Brown Skillet

This Country Breakfast Hash Brown Skillet is a one pan meal-made with diced hash browns, onions, bacon, and then topped with eggs and melty cheese. It’s naturally gluten free, healthy, and delicious!

Makes 4 servings 

This One Pan Country Breakfast Hash Brown Skillet is incredibly flavorful! Packed with hash browns eggs, crispy bacon, and then topped with eggs! This meal can be whipped up for breakfast, lunch or even dinner. It’s a winner!

What ingredients do I need to make this Country Breakfast Hash Brown Skillet?

  • Center cut bacon or turkey bacon- chopped  
  • Medium onion- diced
  • Garlic cloves-minced 
  • Diced potatoes – I like to use the diced frozen potatoes or southern style hash browns. You could also use fresh diced potatoes, if desired.
  • Salt and pepper- to taste
  • Eggs
  • Reduced fat cheddar cheese- I like to use Krogers reduced fat sharp cheddar or Colby jack cheese. 
  • Scallions-finely chopped (optional garnish)

What other ingredients could I add to this Breakfast Skillet?

  • Bell Peppers, diced
  • Mushrooms, chopped
  • Baby Spinach, chopped
  • Ham, diced

How do I make this Country Breakfast Hash Brown Skillet?

In a large skillet or dutch oven skillet cook chopped bacon until crisp over medium heat.

Remove bacon pieces from skillet and set aside.

Add potatoes, onions, garlic, salt and pepper to the same skillet with remaining bacon grease, cook and stir for 2 minutes over medium heat. 

Continue to cook potatoes and onions, stirring occasionally, until potatoes are browned and tender, about 14-15 minutes. 

Make 4 wells in the potato mixture. Spray each well with nonstick cooking spray. Break one egg in each well. 

Cover and cook on low heat for 8 to 10 minutes or until eggs are completely set.

Sprinkle with cheese and the chopped cooked bacon.

Cover until cheese has melted.

Garnish with scallions, if desired. Divide into four servings.
