Easy Low Carb Breakfast Flautas

These Easy Low Carb Breakfast Flautas are loaded with eggs, cottage cheese ( for added creaminess and protein), crumbled bacon, and cheese! These make for a hearty, savory breakfast – and ready in less than 30 minutes!

Are you looking for a healthy and delicious way to start the day? These homemade cheesy, bacon, and egg taquitos are it!

These make-ahead flautas are one of our favorites for busy mornings- especially when we need something filling but don’t have the time to make a sit-down breakfast.

Are these breakfast flautas low carb? And low in WW points?

Regular flautas are not low carb friendly since they are made with regular flour tortillas; however, these low carb flautas are an excellent alternative for those following a Weight Watchers and a low carb lifestyle. These are made using the low point/low carb tortillas, eggs, reduced fat cheese, and bacon all of which are low in points and carbs!

What is the difference between flautas and a taquitos?

Flautas are usually made with flour tortillas, while taquitos are typically made with corn tortillas.

What ingredients do I need to make these Easy Low Carb Breakfast Flautas?

  • Small low carb tortillas– I like to use Mission Carb Balance Fajita flour tortillas. You could use any low carb tortilla.
  • Precooked bacon- cooked in the microwave till crispy. Crumbled. I love using Hormel precooked bacon from Sam’s club. You could also switch things up and use turkey sausage crumbles.
  • Large eggs-I use 4 large eggs mixed with cottage cheese. If you aren’t a fan of that combination, free to add two large egg whites as a substitute for the cottage cheese.
  • Low fat cottage cheese– gives the eggs a creamy texture and provided extra protein. 
  • Salt and pepper- to taste
  • Reduced fat cheese-shredded. I like to use the reduced fat Mexican shredded cheese.
  • Egg-beaten for egg wash. The beaten egg will gives them a golden-brown color and makes them crispy.

How do I make these Easy Low Carb Breakfast Flautas?

You’ll start by cooking the eggs.  The eggs can be cooked on the stove or in the microwave. I have included directions for both ways.

Cooking the eggs in pan:

Whisk egg and cottage cheese in a medium size mixing bowl.

Why do you use low fat cottage cheese in this recipe?

I’m always looking to increase my protein intake! It keeps me full longer and the days I hit my protein macro I have less sugar cravings! One way to easily increase the protein is by adding cottage cheese to my scrambled eggs. The cottage cheese melts nicely into the cooked eggs giving them a more creamy, fluffier texture with added protein!

I promise, even if you’re not a fan of cottage cheese-try it in this recipe!

Pour into a hot skillet pan that has been sprayed with nonstick cooking spray, stirring until scrambled. Season with salt and pepper. 

Eggs in microwave:

Beat eggs and cottage cheese in medium microwavable bowl. Microwave uncovered on High 1 1/2 minutes. Stir cooked outer edges to center. Microwave 1 to 2 minutes longer or until eggs are almost set but still moist. Season with salt and pepper. 
Divide scrambled egg into 6 servings.

Top each tortilla with scrambled eggs, bacon crumbles and cheese.

Roll up tortilla and place on ungreased cookie sheet.

Brush with beaten egg. 

Brushing the tops of the taquitos with beaten egg will gives them a golden-brown color and makes them crispy. 

Bake at 350 degrees for 18 to 20 minutes or until golden brown.

Cook at 450 degrees in air fryer for 6-8 minutes.

Serve warm with your favorite toppings such as: salsa, sour cream, or guacamole!

Can these breakfast flautas be made in advanced for a meal prep breakfast? How can I reheat them each morning?

Yes! These are perfect for meal prep! Make a batch or two and freeze them for an easy on the go breakfast. Let them cool completely and then store leftovers in an ziplock bag or container in the fridge for up to 5 days or freeze for up to 3 months. You can reheat these in an air fryer, stove, or microwave.

  • 4 large eggs
  • 3 Tbsp low fat cottage cheese
  • Salt and pepper, to taste
  • 1/2 cup ( 2 oz.) reduced fat cheddar cheese, shredded
  • 1 large egg, beaten
