Easy Low Point Mexican Mac N’ Cheese

This Easy Low Point Mexican Mac n’ Cheese is simple to make and requires just three ingredients. It’s a skinny version of a Classic Mac n’ Cheese with a little kick-elbow noodles smothered in con queso cheese dip and reduced fat cheddar cheese to create a gooey Mexican Mac n’ Cheese!

Makes 4 ( 1 cup) servings 

What do I need to make this Easy Mexican Mac n’ Cheese?

What can I add to this Easy Mexican Mac N’ Cheese to bulk it up?

  • skinless, boneless chicken, cut into bite size pieces
  • shrimp
  • lean ground turkey
  • lean ground beef
  • grilled steak, cut into bit size pieces
  • veggies such as: mixed veggies, peas, carrots, or broccoli

 

How do I make this Easy Low Point Mexican Mac n’ Cheese?

Using a food scale measure out 8 oz. uncooked Barilla Protein Plus or whole grain elbow noodles. ( about 2 cups)

In a large Dutch oven or stockpot cook 8 oz. of elbow noodles according to the back of the package.

Drain noodles. Then pour noodles into a large mixing bowl or back into the pot. 

Pour queso cheese dip over cooked noodles. 

and cheese over cooked noodles. Stir until well combined.

Serve immediately.

Makes 4 ( 1 cup) servings

  2. Drain noodles. Then pour noodles into a large mixing bowl or back into the pot. 
  3. Pour queso and cheese over cooked noodles. Stir until well combined.
  4. Serve immediately.
  • Store leftovers in an airtight container in the fridge for 5-7 days. You can add a splash of unsweetened almond milk or skim milk to help thin out the sauce before reheating in the microwave.

  • 1/2 cup or about 2 oz. fat free or reduced fat cheddar cheese ( I use Velveeta Shreds)

Hello! This recipe looks great! Where do you purchase Velveeta reduces fat shreds? I checked the Velveeta website and the product doesn’t seem to be on their site. Walmart carries the shreds, but not reduced fat. Thank you for your help!

Hi,

I get the Velveeta shreds at my local Walmart store. If you are unable to locate that brand you can always substitute it for a reduced fat or fat free cheddar cheese.

This is a Shocker!!! So unexpectedly delicious! I have never used a sauce to make Mac, never done it this way but it was great. It had flavor, was creamy and yet light. I had some shrimp so added them and used Trader Joe's Light Mexican shredded cheese. This is simple and fast, a new staple for us. Thank you kindly PS Any ideas on how to use the rest of the Tostitos Sauce

Thanks for your comments! I am so happy you enjoyed it. The Tostitos sauce is fabulous as a dip for low point tortilla chips or I love using as a cheese sauce over my cooked cauliflower or broccoli. Its' only 1 point for 2 tablespoons.
