What ingredients do I need to make these High Protein Breakfast Burritos?

Eggs

Eggs are a complete protein, meaning they contain all nine essential amino acids. They’re also rich in vitamins like B12 and D.

Cottage Cheese

Cottage cheese is naturally high in protein, especially casein protein, which digests slowly and helps keep you full longer. Mixing it into eggs increases the total protein per burrito without adding many extra calories—perfect for a high protein breakfast.

When blended or stirred into eggs, cottage cheese melts into the mixture, creating soft, fluffy, and creamy scrambled eggs. It adds richness without the need for heavy cream or butter.

I like to cook 16 oz. of turkey sausage and then I measure out (using a food scale) 8 oz. of the cooked turkey sausage to add to the scrambled eggs then I store the leftovers of the turkey sausage in an airtight container in the fridge, for later.

How do I make these High Protein Breakfast Burritos?

Spray a large skillet with cooking spray and heat over to medium heat. Add turkey sausage and break it up as it cooks. Stir until fully cooked, about 10 minutes. Remove from pan and set aside on a paper towel-lined plate. 

Spray the same large skillet with cooking spray. Add eggs and cottage cheese. 

Use a spatula and slowly move eggs and cottage cheese around the edge of the pan toward the center and repeat moving the eggs towards the center rotating with the uncooked eggs. Continue stirring until eggs and cottage cheese are scrambled. Season with salt and pepper. 

Remove from heat and add cooked sausage crumbles to scrambled the eggs. 

Lay out the tortillas and add a heaping 1/2 cup of scrambled eggs and sausage to the middle of each tortilla. 

Roll the burrito by folding in the outside edges of the tortilla to the center and then while keeping those edges in, fold up the bottom of the tortilla and tightly wrap it under the sausage and eggs. Keeping the edges folded in while tightly wrapping the rest of the burrito up. 

Enjoy! Store leftovers in fridge or freezer for meal prep.
