These Hot Honey Beef Power Bowls have gone viral on TikTok the last few weeks!! These power bowls are packed with protein, fiber, essential vitamins, antioxidants, healthy fats, and are packed with so much flavor. There’s a reason why these power bowls have gone viral.

These Hot Honey Beef Power Bowls are healthy and full of essential vitamins, antioxidants, and healthy fats! And let’s not forget the best part…they have 42 grams of protein per bowl. These make for the perfect meal prep lunch or dinner!

Now, I know you may think the combination of ingredients used in these power bowls are little strange..But, I am here to tell you-give these power bowls a try! They are a MUST!

So, if you haven’t yet tried them-now’s your chance!

What ingredients do I need to make these Hot Honey Beef Power Bowls?

  • Raw sweet potatoes-peeled and cubed. These are packed with essential vitamins and antioxidants.
  • 96% lean ground beef– you could use ground turkey as a substitute, if preferred. Provides the main protein for these power bowls.
  • Taco seasoning– for flavoring the ground beef. I like to use low sodium taco seasoning.
  • Fat free cottage cheese or low fat Good Culture 2% cottage cheese– I prefer the Good Culture cottage cheese
  • Avocado-sliced or diced. Avocados are packed with fiber, healthy fats along with vitamins and minerals!
  • Mikes hot honey– this is so good and a MUST! You can find this at most grocery stores or HERE on Amazon

How do I make these Hot Honey Beef Power Bowls?

Preheat the oven to 400° degrees or air fryer to 400° degrees. Peel and wash the sweet potatoes, then cut into 1/4″ cubes. 

Place cubed sweet potatoes on a parchment-lined baking tray. 

Spray with olive oil cooking spray, season with salt and gently toss to coat. Place in the oven. Roast for 35-40 minutes flipping halfway. Air fryer: Preheat air fryer to 400° degrees. Spray with olive oil spray and season with salt. Gently toss to coat. Place in air fryer basket. Air fry for 20 minutes flipping halfway. 

 In a large skillet brown ground beef over medium-high heat. Cook until brown and add taco seasoning with 2 tbsp of water. Stir and cook until well combined.

Divide the ground beef and sweet potatoes into 3 equal portions. (I like to weigh the cooked ground beef and sweet potatoes separately and then divide that weight for each one by three)

I use THIS food scale to weigh my food. I highly recommend it.

Add 1/2 cup cottage cheese and 30 grams avocado to each serving bowl. 

Drizzle a 1/2 tablespoon of hot honey over each serving bowl. Enjoy!

Store leftovers separately in airtight containers in the fridge up to 4 days.  Reheat the taco beef and sweet potatoes before adding cottage cheese and avocado!
