This Lightened Up Biscuits And Gravy Casserole is a protein packed breakfast casserole dish that is baked all together in one dish for an easy weekend brunch or breakfast! It’s easy to make and full of flavor!!

Makes 8 servings

Flavorful turkey sausage mixed with protein packed eggs, and topped with pork gravy and baked in flaky, buttery biscuits! It’s easy to make and full of flavor!!

What ingredients do I need to make this Lightened Up Biscuits And Gravy Casserole?

  • Refrigerated biscuits– I use Great Value from Walmart
  • Breakfast turkey sausage– I use Butterball breakfast sausage
  • Reduced fat cheese-any cheese will work. I like to use a 4 blend reduced fat cheese. Shredded.
  • Large eggs-for protein and used as a binding agent in the casserole.
  • Skim milk- I like to use Fairlife skim milk for added protein. You can use unsweetened almond milk or unsweetened coconut milk.
  • Kosher salt-to taste
  • Ground black pepper-to taste
  • Water– to mix with gravy powder
  • Pork gravy mix-for gravy

How do I make this Lightened Up Biscuits And Gravy Casserole?

Preheat the oven to 350 degrees. Spray a 9×13-inch baking dish with non stick cooking spray. 

Cut biscuit dough into 1″ pieces, and line the bottom of the prepared pan with biscuit pieces.

Heat a large skillet over medium-high heat. Cook and stir sausage in the skillet until browned and crumbly, 5 to 7 minutes; drain and discard any grease.

Layer cooked sausage over the layer of biscuit pieces,

Layer 1/2 cup shredded cheese over the sausage.

In a separate bowl whisk eggs, milk, salt, and pepper.

Meanwhile, mix water and gravy mix together in a saucepan; bring to a boil. Reduce heat and simmer until gravy is thickened, 1 to 2 minutes, adding more water for a thinner gravy. Remove from heat and let it cool for a few minutes.

Pour egg mixture over biscuit pieces and sausage, then pour gravy over egg layer. 

Bake in the preheated oven until eggs and biscuits are cooked through, about 30-35 minutes.

Serve and enjoy!

Store leftovers in an airtight container in the fridge for up to 5 days or freeze for up to 3 months.
