Lightened Up Copycat Taco Bell’s Gordita Crunch

This Lightened Up Copycat Taco Bell’s Gordita Crunch recipe is a tasty lightened up version of Taco Bell’s Gordita Crunch! These are loaded with Mexican flavor and simple to make! Perfect for those busy weekday nights!

What is a Gordita Crunch?

 The Gordita Crunch from Taco Bell is a hard shell taco, wrapped up in flatbread, and then topped with melted cheese. It’s packed with meat, spicy cream sauce, lettuce, and shredded cheese.

This lightened up version of the Gordita Crunch has refried beans in between the two taco shells rather than melted cheese-which means higher protein, more fiber, and less points!

If you love their spicy cream sauce you can make a lighter version using 1/2 cup Greek yogurt, 1 tsp taco seasoning and a squeeze of lime juice.

How do I make these Lightened Up Copycat Taco Bell’s Gordita Crunch?

Spray a skillet pan with non stick cooking and heat over medium-high heat. Add meat; cook, breaking apart, until browned and cooked through.

Add taco seasoning and water, cook 3-5 minutes to blend flavors.

To assemble tacos, spread about 2 tablespoons of refried beans on each flour tortilla.

Wrap it around a corn taco shell. 

Fill corn tortilla shells with meat mixture and desired toppings.

Serve immediately.

Store leftover of meat in an airtight container in the fridge for up to 3 days.

Can these made ahead of time? 

These are best prepped just before serving, however you can certainly make the rest of the recipe ahead to make anytime you want them. 

Cook the seasoned beef as directed and store it in an airtight container in the refrigerator for up to four days.  Prep any taco toppings ahead and store them in individual containers until ready to serve.

How do I make the spicy ranch sauce for them?

If you love their spicy cream sauce you can make it using 1/2 cup Greek yogurt and adding 1 tsp taco seasoning and a squeeze of lime juice.

  • 1 Tbsp Taco Bell taco seasoning store-bought or homemade
  • 2 Tbsp water
  • 1 can (16 oz.) fat free refried beans, heated
  • 12 zero net carb flour tortillas
  • 12 crisp corn taco shells, heat according to package directions. I like to use Old El Paso Carb Advantage Taco Shells
  • Optional taco toppings such as: cheese, shredded lettuce, tomato, onion, salsa, or spicy cream sauce.

Homemade Taco Seasoning:

  • 1 teaspoon chili powder
  • 1 teaspoon cumin
  • ½ teaspoon smoked paprika
  • ½ teaspoon garlic powder
  • ½ teaspoon onion powder 
  • ½ teaspoon sea salt
  • ¼ teaspoon ground black pepper

Spicy Cream Sauce:

  • 1/2 cup nonfat Greek yogurt or fat free sour cream
  • 1 tsp taco seasoning
  • 1 lime- juce squeezed in
