This Skinny Philly Cheese Soup is just like your favorite sandwich in a soup! Made with ground beef, peppers, onions, garlic and cheese!! It’s sure to hit the spot!
Servings: Makes 6 (1 1/2 cup ) servings

Ingredients:
- 16 oz. 96% lean ground beef
- 1 small yellow onion, chopped
- 1/2 green bell pepper, chopped
- 2 tsp. salt
- 1 tsp. garlic powder
- 1 cup skim milk
- 4 cups low sodium beef broth
- 8 oz. light mozzarella cheese
- 2 oz. light cream cheese, softened
- dash of Italian seasoning ( I use Dak’s Italian Blast)
Directions:
- Spray a skillet with non stick cooking spray, cook ground beef until it’s no longer pink.
- In a crockpot add the cooked beef, onion, peppers, salt, and garlic powder.
- Pour in broth and milk.
- Cover and cook on high 3-6 hours or low 5 – 8 hours.
- Add softened light cream cheese and mozzarella.
- Stir until cheeses have melted. Remove from heat.
- Sprinkle Italian seasonings on top and serve.
