Skinny Philly Cheese Soup

 

This Skinny Philly Cheese Soup is just like your favorite sandwich in a soup! Made with ground beef, peppers, onions, garlic and cheese!! It’s sure to hit the spot!

Servings: Makes 6 (1 1/2 cup ) servings

GREEN: 5 Smart Points per serving

PURPLE: 5 Smart Points per serving

 

Ingredients: 

  • 16 oz. 96% lean ground beef 
  • 1 small yellow onion, chopped
  • 1/2 green bell pepper, chopped
  • 2 tsp. salt
  • 1 tsp. garlic powder
  • 1 cup skim milk 
  • 4 cups low sodium beef broth
  • 8 oz. light mozzarella cheese 
  • 2 oz. light cream cheese, softened
  • dash of Italian seasoning ( I use Dak’s Italian Blast)

Directions:

  1. Spray a skillet with non stick cooking spray, cook ground beef until it’s no longer pink. 
  2. In a crockpot add the cooked beef, onion, peppers, salt, and garlic powder.
  3. Pour in broth and milk. 
  4. Cover and cook on high 3-6 hours or low 5 – 8 hours.
  5. Add softened light cream cheese and mozzarella.
  6. Stir until cheeses have melted. Remove from heat.
  7. Sprinkle Italian seasonings on top and serve.
