How do I make these Two Point Chocolate Chip Cookies?

The two key ingredients to making these chocolate chip cookies low in points is using a zero Freestyle smart point brown sugar substitute- either Sukrin Gold or Lakanto Golden Monk Fruit Sweetener– which can be found online HERE.  I also use Land o’ Lakes light butter made with canola oil, which is a light butter to lower the point value.

I love the Land o’ Lake light butter for all of my baking recipes. I have found that it has the lowest points for a light butter and it tastes amazing! You can find it at most grocery stores next to the butter. It comes in a tub-with a green lid. Be sure that it says light butter-they sell one that is regular that is made with canola oil as well-so be sure to check that it says light.

Let’s face it-I’m pretty particular about my chocolate chips when it comes to chocolate chip cookie. They need to be milk chocolate! It’s the one thing that I just won’t compromise on.  Yes, chocolate chips do carry a bit of points but that is what makes these chocolate chip cookies taste so delicious!

You can find the Ghiradelli chocolate chips at most grocery stores in the baking aisle or online here!

Preheat your oven to 375 degrees.  Line a cookie sheets with parchment paper.

In a large mixing bowl, cream together the two sugar substitutes and softened butter. Stir until thoroughly combined (I use a fork as my whisk).

Whisk in the egg whites and vanilla extract until smooth.

Add Kodiak Cakes Protein Pancake Power Cakes, Flapjack and Waffle Baking Mix and a dash of salt, stir until fully combined and a smooth dough is formed.  Fold in the chocolate chips.

Drop the dough by 1 rounded tablespoon onto cookie sheet, about 2 inches apart.

Cook for 8-10 minutes or until edges are lightly golden.

These are very good! Even though I thought it said two large eggs (which I questioned in my head lol) so they’re very fluffy! Can’t wait to make them the correct way. Thanks for all your recipes!
