Lightened Up Pumpkin Chili

This Lightened Up Pumpkin Chili is a traditional chili that incorporates pumpkin puree-making for a delicious, hearty, fall comfort meal.  Filled with warm spices, pumpkin puree, lean ground beef or turkey, beans, and diced tomatoes! All the flavors of fall!

Makes 8 servings

Around this time of the year my family begs for this pumpkin chili. It’s packed with so much fall flavors! A big bowl of pumpkin chili topped with shredded cheese, sour cream, and chips is one of my ultimate cold-weather comfort foods. This is a comfort meal that I’ve loved since I was a kid, and I still can’t get enough of it.

What ingredients do I need to make this Lightened Up Pumpkin Chili?

  • Yellow onion-diced 
  • Garlic-minced 
  • 96% lean ground beef or turkey 
  • Low sodium kidney beans-drained
  • Low sodium black beans- drained 
  • Petite diced tomatoes-not drained
  • Pumpkin purée – canned. DO NOT use pumpkin pie filling. The can needs to read 100% pumpkin puree.
  • Tomato paste 
  • Water or low-sodium chicken broth or vegetable broth 
  • Chili powder 
  • Paprika or smoked paprika
  • Cumin
  • Garlic powder 
  • Onion powder 
  • Black pepper
  • Kosher salt

How do I make this Lightened Up Pumpkin Chili?

This chili can be made on the stove, Instant Pot, or Slow Cooker. Here are the step by step direction for making it on the stove.

Heat and spray a large saucepan or dutch oven with non stick cooking spray. 

Add onion and sauté it for a few minutes until translucent and soft.

Add in garlic and let it cook for one more minute.

Meanwhile, combine spices into a small bowl. 

Add in ground lean beef or turkey, breaking it up and cooking until no longer pink.

Reduce heat to medium-low and stir in your pumpkin, beans, diced tomatoes and tomato paste.

Add spices and chicken broth into the chili. Stir well. 

Let it simmer for 25-30 minutes over low heat.

Enjoy!

Add cheese, fat free sour cream or Greek yogurt, cilantro, green onions, or any toppings you desire.

Ingredients:

  • 1 medium yellow onion, diced

  • 1 lb. 96% ground lean ground beef or turkey 
  • 1 (15oz.) can low sodium kidney beans, drained
  • 1 (15oz.) can low sodium black beans, drained 
  • 1 (15oz.) can petite diced tomatoes 
  • 1 (15oz.) can pumpkin purée 
  • 1/2 (6 oz.) can tomato paste 
  • 2 cups water or low-sodium chicken broth or vegetable broth 

Chili Spice Ingredients: 

  • 1 Tbsp chili powder 
  • 1/2 tsp paprika or smoked paprika
  • 1 tsp cumin
  • 1/2 tsp garlic powder 
  • 1/2 tsp onion powder 
  • 1/4 tsp black pepper
  • 1 tsp kosher salt

Stove Top Directions: 

  • Heat and spray a large saucepan or dutch oven with non stick cooking spray. 
  • Add onion and sauté it for a few minutes until translucent and soft.
  • Add in garlic and let it cook for one more minute.
  • Meanwhile, combine spices into a small bowl. 
  • Add in ground lean beef or turkey, breaking it up and cooking until no longer pink.
  • Reduce heat to medium-low and stir in your pumpkin, beans, diced tomatoes and tomato paste.
  • Add spices and chicken broth into the chili. Stir well. 
  • Let it simmer for 25-30 minutes over low heat.
  • Enjoy! Add cheese, fat free sour cream or Greek yogurt, cilantro, green onions, or any toppings you desire.

Instant Pot Directions:

  • Turn instant pot to sauté and spray the instant pot with nonstick cooking spray. 
  • Add in onion and sauté it for a few minutes until slightly soft.
  • Add in garlic and let cook for one more minute. 
  • Meanwhile, combine spices into a small bowl. 
  • Add in lean ground beef or turkey, breaking it up and cooking until no longer pink.
  • Add the mixed spices into your chili mixture. Stir well. 
  • Add the pumpkin, beans, diced tomatoes, tomato paste and chicken broth. Stir until well combined. 
  • Set your Instant Pot to manual cook for 12 minutes.
  • Once the 12 minutes are up, let it natural release for 15 minutes and then quick release.
  • Serve! Add cheese, Greek yogurt, green onions, or any other toppings you desire

Slow Cooker Directions:

  • Heat and spray a large saucepan or dutch oven with non stick cooking spray. 
  • Add onion and sauté it for a few minutes until translucent and soft.
  • Add in garlic and let it cook for one more minute.
  • Meanwhile, combine spices into a small bowl. 
  • Add in ground lean beef or turkey, breaking it up and cooking until no longer pink.
  • Place onion, garlic, and cooked ground beef or turkey into a slow cooker.
  • Add spices and chicken broth. Stir well. 
  • Cook on LOW for 3-4 hours or HIGH for 1-2 hours.
  • Enjoy! Add cheese, fat free sour cream or Greek yogurt, cilantro, green onions, or any toppings you desire.

    10. Serve! Add cheese, Greek yogurt, green onions, or any other toppings you desire!

    Slow Cooker Directions:

    1. Heat and spray a large saucepan or dutch oven with non stick cooking spray. 
    2. Add onion and sauté it for a few minutes until translucent and soft.
    3. Add in garlic and let it cook for one more minute.
    4. Meanwhile, combine spices into a small bowl. 
    5. Add in ground lean beef or turkey, breaking it up and cooking until no longer pink.
    6. Place onion, garlic, and cooked ground beef or turkey into a slow cooker.
    7. Add spices and chicken broth. Stir well. 
    8. Cook on LOW for 3-4 hours or HIGH for 1-2 hours.
    9. Enjoy! Add cheese, fat free sour cream or Greek yogurt, cilantro, green onions, or any toppings you desire.
