Asian Chicken Pasta Salad

This Asian Chicken Pasta Salad is the perfect salad to serve at your next family gathering, summer cookout, or picnic. This salad tastes even better the longer it chills in the fridge!

What ingredients do I need to make this Asian Chicken Pasta Salad?

  • Bow Tie Pasta or Whole Grain Bow Tie Pasta-or gluten-free pasta would also work.
  • Cooked Skinless Boneless Chicken Breast or rotisserie chicken (without the skin)– chopped
  • Matchstick Carrots– chopped
  • Cilantro-chopped 
  • Green Onions-thinly sliced
  • Toasted Sesame Seeds
  • Silvered Almonds- optional
  • Lite Kraft Toasted Sesame Dressing-you can use Kraft lite toasted sesame dressing or you can make your own toasted sesame dressing. 

What other ingredients can I add to this Asian Chicken Pasta Salad?

  • Mandarin oranges- drained
  • Red pepper, chopped
  • Edamame

How can I make my own dressing?

Here’s a recipe you can use for my homemade toasted sesame dressing.

Toasted Sesame Dressing:

  • 1/4 cup low-sodium soy sauce- be sure to use low sodium otherwise the dressing will be VERY salty. 
  • 1/4 cup vegetable or olive oil- I use vegetable oil 
  • 2 Tbsp regular brown sugar, unpacked or zero point brown sugar sweetener such as Lakanto Golden Monkfruit Sweetener 
  • 3 Tbsp rice vinegar
  • 1 Tbsp sesame oil
  • 1/4 tsp dried ginger
  • 2 tsp toasted sesame seeds

Place all ingredients into a jar with a lid. Shake well. 

How do I make this Asian Chicken Pasta Salad?

Cook bow tie pasta in boiling water, for about 10 minutes or one minute less than package directions indicate, or until al dente.

Drain pasta, and rinse with cold water, to stop the cooking process and cool the pasta. 

Meanwhile, chop veggies

and chicken and place into a large bowl.

Add cool pasta.

Pour 1/2 cup dressing over the pasta salad. Mix until well combined.

Cover and chill in the refrigerator for at least two hours before serving for the best results. 

Stir in another 1/4 cup Kraft dressing or the remaining homemade dressing and/or garnish with almonds just before serving.

This looks really delicious. I'm trying to think of other veggies I can add in to bulk this up. Do you think slaw mix or chopped napa cabbage would work in this, or would the flavor/texture not be good? Or maybe chopped broccoli?
