Makes 12 tenders
What ingredients do I need to make these Bacon Wrapped Chicken Tenders?
- Skinless, boneless chicken tenders– or you can use skinless, boneless chicken breasts sliced into 12 strips
- Center cut bacon or turkey bacon slices– I use Oscar Mayer center cut bacon
- Light brown sugar-unpacked. I only use 2 tsp which doesn’t impact the overall point value. If you wanted you could use a zero point brown sugar sweetener such as Lakanto Golden Monkfruit Sweetener.
- Paprika-for seasoning
- Garlic powder-for seasoning
- Onion powder-for seasoning
- Pepper -for seasoning
- Seasoned salt-for seasoning
- Sugar free BBQ sauce-I love Sweet Baby Ray’s No Sugar Added Original Barbecue Sauce
or Hughes Sugar Free BBQ - Green onions– thinly sliced for garnish
How do I make these Bacon Wrapped Chicken Tenders?
Preheat the oven to 375 degrees.
Line a sheet pan with parchment paper or foil that has been lightly sprayed with non stick cooking spray and set aside. (I like to cook the tenders on a wire rack on top of the baking sheet and spray the wire rack with non stick cooking spray-but if you don’t have one-don’t stress-you can just lay the tenders on the lightly coated foil.)
In a small bowl mix light brown sugar, paprika, garlic powder, onion powder, pepper, seasoned salt. Mix until well combined.
Place the chicken breast tenders into a shallow plate or bowl. Lightly coat chicken tenders with seasoning mixture.
Wrap one a piece of bacon around each chicken tender and secure it with a toothpick, if needed.
Place wrapped chicken tenders, seam down onto prepared baking sheet or wire rack in a single layer.
Cook for about 22-25 minutes remove from oven.
Using a basting brush, brush each chicken tender with sugar free BBQ sauce.
Place bacon wrapped chicken tenders back in the oven for another 5 minutes
and an additional 2 minutes for broiling or until the bacon is a nice golden brown.
Garnish with thinly sliced green onion, if desired!

@Genene, or try this. The bacon is roasted on a rack at 400° F, just until both sides begin to brown, but are not crisp,” “The goal is to have a par-cooked piece of flexible bacon that's easy to wrap but isn't raw.” Only roast the bacon until it just begins to shrink and gets slightly red, about 5 minutes, depending on the thickness. Using a thicker cut that won’t crisp up too quickly and will still easily wrap around your ingredient.

@Genene, try microwaving a couple minutes first then wrap the chicken tenders and bake.

Hi Genene
Yes, it can vary depending on the bacon you use. It depends on the brand and cut of bacon- some may need a longer cooking time. I suggest increasing the cooking time 15-20 minutes if that is the case.
Thanks!

How big do you cut the tenders if cutting from a breast? 12 strips of how much weight or size of strip?
