What ingredients do I need to make this Balsamic Avocado Toast?

  • Low point bread-toasted. Any low point bread will work. We personally like to use Extraordinary Bites Keto Bread which has 1 net carb or 30 calories per slice. It’s our favorite! We get it at my local Walmart Store. Click HERE to find a store location near you.
  • Small avocados-mashed. We recommend using a food scale to weigh the avocado out without the pit. This way you will get more for the point value. You’ll use 6 oz. for four slices of bread. Don’t have a food scale? No worries, you’ll use 1.5 small avocados. Click HERE for the food scale I have and love.
  • Salt
  • Black pepper
  • Garlic cloves-minced
  • Fresh lemon juice
  • Cherry tomatoes-halved
  • Baby arugula leaves
  • Gorgonzola cheese crumbles or reduced fat blue cheese crumbles
  • Balsamic glaze– to drizzle on top. We love to use Trader Joe’s balsamic glaze. Keep in mind-a lot goes a long way-this is the star ingredient in this Balsamic Avocado Toast.

How do I make this Avocado Toast?

Remove the pit from the avocado and discard. Scoop out the avocado into a medium mixing bowl and mash with avocados with a fork or potato masher.

Add lemon juice, minced garlic, salt, and black pepper and mix to combine.

Toast the bread until golden. 

Spread the avocado mixture over the bread.

Add arugula leaves

the halved cherry tomatoes, and gorgonzola cheese on top. 

Drizzle the balsamic glaze over toast.

Serve immediately!

Absolutely fabulous and so easy. I found the basalmic glaze at Trader Joe's. It elevates the recipe. I used carbonaut Bread because it is gluten free. We had company for several days and this allowed me to serve a sophisticated point friendly easy to make breakfast. Hope you create more basalmic glaze recipes. Thank you
