Breakfast Quesadillas

Celebrate Cinco de Mayo with these Breakfast Quesadillasfilled with egg, cheese and your favorite breakfast protein-easy to make and incredibly delicious!

Makes 2 servings 

Cinco de Mayo is quickly approaching, and you know what that means. We’re ready to break out our best recipes that feature everyone’s favorite breakfast food: the quesadilla!

You’ve had a quesadilla for dinner, and you’ve probably even eaten one for lunch. But there’s nothing quite like a quesadilla to kickstart your day. And no—we’re not talking about an omelet between two tortillas. (Although we won’t judge if you want to try that.) We’re talking about the delicious, cheesy, egg-y quesadilla you know and love, dressed up with your favorite breakfast protein.

It’s a quick breakfast option—it’ll take less than 10 minutes to make this recipe—and it’ll leave you feeling satisfied all morning long. So get ready to make this delicious Cinco de Mayo dish!

What ingredients do I need to make these Breakfast Quesadillas?

  • Large eggs -beaten. You could substitute the whole eggs with 1/3 cup egg beaters, if desired. 
  • Salt and pepper -to taste
  • Low point 8″ tortillas- I use like to use the 1 point Ole’ Extreme Wellness tortillas or La banderita low carb tortillas. Both are 50 calories or less, high in fiber, and low in points!  You can find these tortillas at most grocery stores near the tortillas. I get mine at my local Walmart store or online HERE on Amazon.
  • Precooked Hormel Bacon-cooked and crumbled. 
  • Reduced fat three cheese blend or Mexican blend– I use Trader Joe’s lite Mexican blend or three cheese blend, divided 
  • Favorite quesadilla toppings such as: fat free sour cream, jalapeños, salsa, guacamole, cilantro, and or diced tomatoes.

What other protein could I use in these Breakfast Quesadillas?

  • Jinny Dean turkey sausage crumbles 
  • Canadian Bacon, diced
  • Deli ham, diced
  • Black beans, rinsed and drained 
  • Chicken sausage, chopped 

How do I make these Breakfast Quesadillas?

Spray a large skillet with nonstick cooking spray, scramble the eggs.

Season with salt and pepper, to taste. 

Spray a Cast Iron Skillet, large skillet, or griddle with nonstick cooking spray. Heat over medium-high heat. Place one tortilla on the skillet or griddle and heat on one side.

When tortilla is hot, flip and add 3 Tbsp of  cheese.

Add scrambled egg and evenly distribute throughout the tortilla.

then add bacon or sausage crumbles over the top.

Sprinkle with remaining cheese. 

Top with remaining tortilla. Spray the top of the tortilla with nonstick cooking spray. Cook for about 1 minute or until cheese starts to melt. Slowly flip it over to the other side.  

Cook until for 2-3 minutes or until cheese is melted and the bottom tortilla is golden brown. 

Cut into quarters with a pizza cutter.

Serve with your favorite quesadilla toppings.

Directions:

  2. Lightly spray a Cast Iron Skillet, large skillet, or griddle with nonstick cooking spray. Heat over medium-high heat. Place one tortilla on the skillet or griddle and heat on one side.

  8. Serve warm with your favorite quesadilla toppings such as: fat free sour cream, jalapeños, salsa, guacamole, cilantro, and or diced tomatoes.

Double or triple the recipe and freeze these quesadillas for a quick breakfast. Freeze quesadillas in layers (separated by parchment paper), before you transfer them to a freezer-safe ziplock bag, to ensure they don’t stick together. Freeze for up to 2 months. You can thaw overnight in the refrigerator and reheat on the stove or air fryer.
