- Boneless skinless chicken tenders or breasts– you can use fresh or frozen. I like to use fresh chicken tenders or breasts. Note: frozen chicken breasts contains more liquid and therefore will cause the sauce to be thinner.
- Buffalo Wild Wings Parmesan Garlic Sauce- you can find this at most grocery stores near the condiments or on Amazon HERE.
- Unsweetened almond milk or any milk would work
- Laughing cow cheese wedges or light cream cheese –I like to use garlic and herb laughing cow cheese
- Dry short pasta-you can use any short pasta-gluten-free would also work. I prefer to use Ronzoni Smart Taste Penne Rigate, or Fiber Gourmet; which has more fiber and is lower in points. Click HERE to order Fiber Gourmet from Amazon.
- Parmesan cheese-grated

NOTE: The cooked pasta tends to soak up most of the “liquid. Feel free to add additional milk or nonfat plain yogurt, if desired. I do not recommend freezing this pasta because it contains dairy and tends to separate when it thaws. To reheat, add a splash of unsweetened almond or cashew milk and cook in a skillet or microwave until warmed though.

Just wondering, have you ever made this recipe with leftover rotisserie chicken? If not, would you recommend it and if so, how would you change the recipe?

Loved this dish!! Only had a little over a pound of chicken tenders, so added 8 Oz of white mushrooms, quartered. Also used whole wheat rotini, which Hubs didn't even notice. Thanks for another great recipe!!
