Caprese Grilled Cheese Sandwich

This Caprese Grilled Cheese Sandwich makes for the BEST summer lunch! A mouth watering sandwich on sour dough bread-packed with fresh Heirloom tomatoes, fresh basil, and mozzarella cheese and a cooked in savory garlic butter. It’s scrumptious and simple to make!

What ingredients do I need to make this Caprese Grilled Cheese Sandwich?

  • Light butter made with canola oil
  • Oregano
  • Garlic-minced
  • Sourdough bread– you could use low calorie or keto bread, if desired 
  • Light mozzarella cheese-shredded
  • Heirloom tomatoes-  ¼” slices. I love fresh from the garden tomatoes or you can get them at Trader Joe’s
  • Fresh basil leaves-torn 
  • Kosher salt
  • Balsamic vinegar glaze– this gaze is the cherry on top. I love this glaze with fresh tomatoes and mozzarella! It is optional BUT highly recommended!

How do I make this Caprese Grilled Cheese Sandwich?

Heat a skillet over medium heat add the butter and pinch of oregano. Let the butter melt. Reduce the heat to low and stir in the garlic. Cook for 30 seconds until the garlic is toasted.

Turn off the heat.

Brush the garlic butter onto each slice of bread.

Spray the same skillet with olive oil cooking spray to generously coat the bottom.

On one slice, add 1/2 the shredded mozzarella and the tomato. 

Season with sea salt and top with basil leaves. 

On the other piece add the remaining mozzarella.

Heat the skillet over medium heat.

Cook until crisp and golden, 1 minute or so. 

Close the sandwich with the top piece of bread. Use a spatula to gently flip the sandwich over.

Cover the skillet with a lid and cook for another couple of minutes, or until the second side is crisp and golden, and the cheese is melted.

Cut the sandwiches in half. Top with fresh basil leaves and a of drizzle balsamic glaze over the top.

  • 1/3 cup light mozzarella cheese, shredded
  • 2 slices of heirloom tomatoes,  ¼” slices 
  • 3 fresh basil leaves, torn 
  • Kosher salt
  • 1 tsp Balsamic vinegar glaze, optional 

Directions:

  6. Gently transfer the pieces of bread to the skillet, on the garlic butter side. 
  7. Cook until crisp and golden, 1 minute or so. 
  8. Close the sandwich with the top piece of bread. Use a spatula to gently flip the sandwich over.
  9. Cover the skillet with a lid and cook for another couple of minutes, or until the second side is crisp and golden, and the cheese is melted.
  10. Cut the sandwiches in half. Top with fresh basil leaves and a of drizzle balsamic glaze over the top.
