Can I just say I’m obsessed with Chick-fil-A’s market salad! I could it everyday for lunch-except for the fact that it’s high in points! Now, the salad itself is only 5 WW points but with the crunchy delicious toppings and vinaigrette it come out 22 WW points! Seriously! I knew I needed to create a lighter version because let’s be honest it’s definitely not worth 22 WW Points!
Now, this copycat market salad is perfect for summer. The combination of the sweet, savory ingredients makes this salad INCREDIBLY DELICIOUS! It’s packed with fresh fruits, vegetables, and lean protein that will keep you fueled for hours! Now, that’s what I call a WINNER!
What ingredients do I need to make this Copycat Chick-fil-A Market Salad?
- Romaine lettuce-chopped
- Boneless, skinless grilled chicken breast-sliced horizontally into strips
- Kosher salt and pepper
- Paprika
- Honeycrisp apple-diced.
- Green apple-diced
- Strawberries-sliced
- Blueberries
- Store bought granola or my low point granola– you can find my recipe for the low point granola HERE.
- Roasted sliced almonds
- Crumbled blue cheese
For the Dressing:
- Apple cider vinegar
- Extra-virgin olive oil
- Honey
- Dijon mustard
- Salt and black pepper- to taste
How do I make this Copycat Chick-fil-A Market Salad?
In a small bowl combine dressing ingredients and whisk until well blended. Set aside.

Slice the chicken horizontally into thin strips.
Season the chicken slices with kosher salt, black pepper, and paprika.
Heat a large skillet on medium heat and cook the chicken slices for 5-8 minutes on each side until cooked through. Remove from heat.

Let chicken cool for 5 minutes.
Cut cooked chicken into thinner slices and assemble salad portions.

Divide romaine lettuce, blueberries, strawberries, apples into two portions.

Place 1/2 chicken slices on top each salad. Add 1 tbsp roasted almonds, 1 tbsp blue cheese crumbles, and 1 tbsp granola on top per salad.

Drizzle with 3 Tbsp vinaigrette per salad.

Low Point Granola:
Ingredients:
- 4 cups old-fashioned or quick cooking oats ( I use Trader Joe’s organic old-fashioned oats)
- 5 Tbsp sliced almonds
- ½ tsp ground cinnamon
- 1 tsp vanilla or almond extract
- ¼ tsp salt
- 5 Tbsp Better’n Peanut Butter Peanut Butter
- 2 Tbsp honey
- 2 Tbsp sugar free syrup -I recommend Mrs. Butterworth’s sugar free syrup
- 2 tbsp brown sugar substitute-I use Lakanto Golden Monkfruit Sweetener
- 1 egg white
Directions:
- Preheat oven to 300 degrees. Line a baking sheet with parchment paper.
In a large mixing bowl combine, oats, brown sugar substitute, almonds or nuts of your choice, cinnamon, and salt. Mix until well combined. - In a small, separate bowl, melt the peanut butter or light butter in the microwave for 30 seconds then add honey, sugar free syrup, and vanilla together. Whisk until well combined.
- In a separate bowl, using a hand beater, beat the egg white until it becomes foamy.
- Pour the egg white into the peanut butter mixture. Whisk until well combined.
- Drizzle mixture over the oat mixture. Stir until all the oats have been well combined.
- Pour the granola mixture on the prepared baking sheet.
- Using a spatula spread it out in an even layer. Using the spatula pack it gently down.
- Bake for 30 minutes or until golden and crispy. Let it cool before breaking into clumps.
