Copycat Olive Garden Minestrone Soup

Serve up your favorite Olive Garden™ soup by making this Copycat Olive Garden Minestrone Soup at home. This hearty soup is made in one pot and takes less than 30 minutes to make. It’s a copycat of the restaurant version that tastes even better than the original recipe! Made with lots of fresh vegetables, beans, shell pasta, and in a light tomato broth.

Minestrone soup is a delicious Italian-inspired soup that is perfect on a cold winter day. A one pot vegetable soup that can be made using with your favorite vegetables.

Minestrone is thicker soup-much like a stew with pasta and beans. This version is one of our most favorite vegetable soups. It reheats well and we love having leftovers for several meals during the week. Serve with French bread and a green salad!

What ingredients do I need to make this Copycat Olive Garden Minestrone Soup?

  • Celery-sliced
  • Carrots-sliced
  • Onion-diced
  • Garlic-minced
  • Zucchini-diced
  • Kosher salt 
  • Black pepper
  • Italian seasoning
  • Canned diced tomatoes– not drained
  • Tomato paste
  • Green beans– canned and drained, then cut into 1-inch pieces
  • Vegetable broth
  • Cannellini beans-canned, rinsed and drained
  • Red kidney beans-canned rinsed and drained
  • Dry small shell pasta-you can use gluten-free pasta, or whole grain small pasta
  • Fresh spinach-torn
  • Parsley-minced

How do I make this Copycat Olive Garden Minestrone Soup?

Spray a large pot or Dutch oven with non stick cooking spray, heat over medium-high.

Add onion, celery, carrots, zucchini and garlic cook until tender, 3-5 minutes.

Stir in tomato paste, then add tomatoes, broth, and Italian seasoning.

Bring to a simmer.

Add cannellini beans, kidney beans, green beans, and pasta. Simmer until pasta is al dente, 10-12 minutes.


Season to taste with salt and pepper and stir in spinach leaves and let cook until spinach is wilted.

Garnish with fresh parsley and serve.

Can you make this soup in a slow cooker?

Yes! This soup can be made in the slow cooker if you’d prefer to do that instead. You can add all the ingredients to the slow cooker minus the pasta, spinach and parsley, then let everything simmer for 4-6 hours on low or 2-3 hours on high. Stir in the pasta and spinach and let it cook for an additional 20-25 minutes, or until pasta is tender. Garnish with parsley and serve!

  • 1 medium zucchini, diced
  • 2 tsp kosher salt

  • 1 (14 oz.) can canned diced tomatoes
  • 1 (6 oz.) can tomato paste
  • 1 cup green beans, canned and drained, then cut into 1-inch pieces
  • 6 cups vegetable broth
  • 1 ( 16 oz.) can cannellini beans, canned, rinsed and drained
  • 1 (16 oz.) can red kidney beans, canned rinsed and drained
  • 1/2 cup dry small shell pasta, gluten free or whole grain small pasta 
  • 2 cups fresh spinach, torn
  • 1 Tbsp parsley, minced

Directions:

This is a definite keeper! Only changes were using chicken broth, as that was what I had, and next time will use frozen green beans. Very flavorful!

Delicious minestrone soup that was easy to put together. I added 2 additional cups of vegetable broth after simmering as the soup was too thick for my preference. Thanks for sharing!
