It takes just a few minutes to throw together, and it’s packed with eggs, onion, bell peppers, sausage, cheese and topped with crispy tater tots.This is the perfect recipe if you’re looking for something new in your breakfast routine. It’s hearty enough to keep you full all morning long, but it doesn’t take much effort to make—it’s simple enough that even if you’re making it at the last minute (or on the weekend), you’ll still have time to get everything else done before heading out the door.
What ingredients do I need to make this Easy Breakfast Tater Tot Casserole?
- Frozen Tater Tots-do not thaw the tater tots.
- Jimmy Dean’s turkey sausage crumbles-if you can’t find the crumbles–you could also use Jennie-O breakfast sausage.
- Yellow onion-diced
- Red bell pepper-diced
- Yellow or green bell pepper– diced
- Garlic– minced
- Reduced fat cheddar cheese– I like to use Velvetta shreds
- Large eggs– you could use 1 and 3/4 cup liquid eggs if you prefer.
- Unsweetened almond milk– any milk would work keep in mind the point value may vary depending on the milk you use. I like to use unsweetened almond milk to keep the point value down.
- Diced green chilies– for flavor
- Parsley-for flavor
- Paprika– for flavor
- Oregano– for flavor
- Kosher salt– to taste
- Black pepper– to taste
How do I make this Easy Breakfast Tater Tot Casserole?
Preheat oven to 375 degrees.
Spray a 9×13 baking dish with non-stick cooking spray. Set aside.
Heat a large skillet over medium-high heat. Add turkey sausage crumbles, onions and bell peppers and cook until the sausage is heated through and onions are softened.
Add garlic and sauté 30 seconds. Drain grease, if needed.
In large bowl whisk eggs, almond milk, green chilies, parsley, oregano, paprika, salt and pepper.
Fold in cheese. Set aside.
Place 10 oz. of the tater tots into the prepared baking dish. If you don’t have a scale to weigh the 10 ounces then just use about 1 cup.
Pour the sausage mixture over the top and spread into an even layer.
Pour egg mixture over the sausage mixture; use a spatula to spread into an even layer.
Top with remaining tater tots.
Bake uncovered for 45-55 minutes or until eggs are set and the tater tots are golden brown.
Remove from the oven.
Sprinkle with chopped chives or green onions, if desired.

Can I make this breakfast casserole ahead of time?
Yes, this casserole can be made 48 hours before serving. You will prep it without adding the tater tots. Cover it with foil and place in refrigerator. When ready to enjoy, remove foil and add tater tots and bake according to directions.
