Easy Ceviche

This Easy Ceviche recipe is packed with fresh shrimp, tomatoes, red onion, fresh cilantro, jalapeños, avocados-and marinaded in fresh citrus juice-it’s healthy and delicious!

Can you feel it? Spring is here! This is the time when flowers bloom and trees grow bringing vibrant colors. This is also a good season for healthy, refreshing, and colorful dishes! Today, I’d like to share with you an easy ceviche recipe that will just hit the spot-and make you excited to eat!

Ceviche (suh·vee·shay) is a healthy and delicious seafood dish that originated in South America and is usually served as an appetizer. I made an easy ceviche recipe packed with fresh shrimp, tomatoes, red onion, fresh cilantro, jalapeños, avocados, all marinated in fresh citrus juice!

Is Ceviche Safe to Eat?

Yes, marinating the raw fish or shrimp in fresh citrus juices essential cooks the shrimp due to the high acidity. Yes, you read that right-the high amount of citrus juice (acidity) will cook shrimp without heat.

I use COOKED shrimp for this particular recipe however; you can use raw shrimp or fish such as; Tilapia, Cod, Mahi Mahi, Bass, or Halibut instead. However; if you use raw fish or shrimp you’ll want to DOUBLE the three citrus (lime, lemon, and orange) juices to ensure the bacteria is killed when it marinates. If you do use raw fish or shrimp-I recommend using the freshest fish or shrimp you can find. The fresher the fish/shrimp the less chance of it having bacteria.

Just follow along the simple steps of the recipe below and you’ll soon whip up this colorful appetizer! I promise it will look and taste so good, you’ll wanna take pictures!

What other ingredients can I add to this Easy Ceviche?!

  • 1 small mango, pitted and diced (optional) 
  • 1 cucumber, diced’
  • 1 lb. Tilapia, Cod, Mahi Mahi, Bass, or Halibut, diced into I/2 inch cubes

How do I make this Easy Ceviche?

Dice the shrimp into 1/2 inch cubes and transfer to a medium size mixing bowl. Set aside.

In a small mixing bowl, whisk together the lemon, lime and orange juice to combine.

I use a hand juicer to squeeze the fresh juice from the citrus fruit.

Pour 1/2 cup of the citrus juice over the shrimp and toss to combine. Cover and marinate in the fridge for 15 minutes.

After the shrimp has marinated, add the diced tomatoes, jalapeños, cilantro, and red onion. 

Toss the ingredients in the remaining citrus juice and allow to marinade for an additional 10 minutes. 

Stir in the avocado, if desired.

Season with salt and pepper, to taste.

Serve on top of romaine lettuce, on a tostada, or with tortilla chips. This is best eaten the same day it’s prepared.

  • 1/4 cup fresh lemon juice, about two lemons
  • 1/4 cup fresh lime juice, about three limes
  • 1/2 cup fresh squeezed orange juice
  • 3 Roma tomatoes, diced
  • 2 jalapeno peppers, seeds and vein removed, minced
  • 1/2 cup fresh cilantro, chopped
  • 1/4 cup red onion, chopped
  • 1 small avocado, pitted and diced (optional) 
  • kosher salt and black pepper, to taste 

Directions:

  1. Dice the shrimp into 1/2 inch cubes and transfer to a medium size mixing bowl. Set aside.
  2. In a small mixing bowl, whisk together the lemon, lime and orange juice to combine. Pour 1/2 cup of the citrus juice over the shrimp and toss to combine. Cover and marinate in the fridge for 15 minutes.
  3. After the shrimp has marinated, add the diced tomatoes, jalapeños, cilantro, and red onion.

  5. Stir in the avocado, mangoes, or cucumbers, if desired. Season with salt and pepper, to taste.

Can you also confirm that the rest of the citrus gets added to the recipe at the end. I made this weekend and I assumed that was the intent.

Hi there! Thank you for your awesome recipes! Would you be able to add a print button for the shrimp ceviche? It doesn't give option to jump to recipe, that's usually how I find the print button. Can't find it anywhere with this one.
