Easy Crustless Spinach Quiche

This Easy Crustless Spinach Quiche is quick and easy and packed with eggs, spinach, onion, and two kinds of cheese for the most flavorful quiche. Perfect for breakfast, brunch, lunch, or dinner! 

Servings: Makes 6 slices 

GREEN: 3 smart points per slice 

BLUE/PURPLE: 2 smart points per slice 

What Ingredients do I need to make this Easy Crustless Spinach Quiche?

  • Olive oil or cooking spray-you will only use 1 tsp olive oil which doesn’t impact the overall point value. You could use non stick cooking spray to sauté the onions if you prefer. 
  • Small onion: diced
  • Garlic cloves: minced
  • Spinach: you can use fresh or frozen. If using frozen be sure to thaw and drain really well
  • Fat free crumbled feta cheese or Parmesan cheese: Either one tastes great. The overall point value is the same if you use either one.
  • Reduced fat or fat free cheddar cheese: shredded. You can substitute the cheddar cheese for your favorite cheese if you prefer- just be sure to calculate the point value for the difference. I use 3 oz. or 1/2 cup of the Velveeta shreds which is 6 points.
  • Eggs/Egg whites: be sure to whisk the eggs well prior to adding to the mixture. For this recipe I use 3 whole eggs + 2 large egg whites to reduce the fat and calories. If you are following the BLUE or PURPLE plan and you can use 5 whole eggs vs. the 3 whole eggs + 2 large egg whites for the same point value.  
  • Unsweetened almond milk or skim milk-you will only use 1/4 cup which doesn’t change the overall point value regardless of which one you use. 
  • Salt-to taste
  • Black pepper-to taste 
  • Nutmeg-adds another layer of flavor. This is optional but highly recommend.

What are other ingredients I can add to the quiche?

This recipe is super versatile-so feel free to add your favorite cooked veggies such as:

  • Diced potatoes
  • Mushrooms 
  • Green Peppers 
  • Red Peppers 
  • Zucchini 
  • Diced tomatoes 
  • Scallions
  • Chopped Broccoli 

How can I avoid a soggy quiche? 

Removing the extra liquid/water from the spinach and onions when cooking will help prevent the quiche from getting soggy. 

Tip: If you are using frozen spinach you can microwave the spinach for 1-2 minutes or until the spinach becomes soft and mushy. Line a colander with a few sheets of paper towels. Put the spinach on the paper towel. Wrap the paper towel around the spinach and squeeze the water out of the spinach.

Can I make this in a muffin tin?

Yes, just spoon in mixture evenly into a prepared 6-cup large muffin pan.

Can I freeze the leftovers?

Yes, when it cools, wrap the crustless quiche tightly in plastic wrap and aluminum foil. This Easy Crustless Spinach Quiche can be frozen up to 3 months.

Just thaw overnight in the fridge and reheat.

How do I make this Easy Crustless Spinach Quiche?

Spray a 9.5 inch pie plate with non-stick spray. Set aside.

Preheat oven to 350 degrees. 

Heat 1 tsp olive oil in a large skillet over medium heat and add garlic and onions. 

Cook for about 4 minutes or until onions are softened.

Add spinach.

Continue cooking and stirring occasionally until the water/moisture has evaporated.

Remove from heat and allow it to sit for a few minutes this will help eliminate the moisture. 

Meanwhile, In a large mixing bowl combine beaten eggs, cheeses, unsweetened almond milk, and seasonings.

Whisk until well combined. 

Stir in spinach mixture.

Pour mixture in prepared pie plate.

Bake in oven for approximately 30-35 minutes or until quiche has set.

Remove from oven and allow it to cool for 5-8 minutes before serving.

  • 2 large egg whites or 1/4 cup liquid egg whites 
  • 1/4 cup unsweetened almond milk or skim milk 
  • 1/4 tsp salt
  • 1/8 tsp black pepper
  • Pinch of nutmeg 

Directions: 

  • Spray a 9.5- inch pie plate with non-stick spray. Set aside.

    I have now made this 3 times and it is the best quiche ever. So easy to make and I serve it with a nice tossed salad for dinner. It cuts so easily so you can make smaller wedges for appetizers or as company bits with wine. I like it more that the usual crust quiches. Who needs dough?

    Quick question. Is the Parmesan you mentioned fat free as well? (Is there such a thing?) BTW… made this the other night and I’m hooked. What a great taste! Thanks for sharing. Pls.. let me know about the Parmesan.
