What do I need to make these No Bake Peanut Butter Cereal Bars?
- Light butter– I use Land O’ Lakes light butter made with canola oil
- Whole Grain Cereal: you can use Corn Flakes, Rice Krispies, Rice Chex, or original Cheerios
- Reduced fat peanut butter: Jif Whips has always been my go-to for low point peanut butter until I discovered it it was discontinued as of June 2020. I was devastated by this news! I immediately went on a hunt for the next best low point peanut butter and discovered Better’n Peanut Butter Peanut Butter. It’s only 3 smartpoints for 2 Tbsp and 100 calories!
- Mini marshmallows
- Vanilla extract-for added flavor

How do I make these No Bake Peanut Butter Cereal Bars?
Spray a 13×9 inch baking pan or dish with non stick cooking spray.
In a large microwaveable safe bowl combine marshmallows and light butter.
Heat on high power for 45 seconds to 1 minutes.
Meanwhile, spray a wooden or silicone spoon with non stick cooking spray. (This will help keep the marshmallows from sticking.)
Stir until marshmallows are melted and smooth.
Mix in the peanut butter and vanilla extract and stir until well combined.
Combine cereal with marshmallow peanut butter mixture.
Continue stirring until the cereal is coated in the marshmallow peanut butter mixture.
Pour and press mixture into prepared pan.
Let them set for 20-25 minutes before cutting.
Using a sharp knife cut into 15 bars.
Store leftovers in an airtight container for up to 5 days

- Mix in the peanut butter and vanilla extract and stir until well combined.
- Combine cereal with marshmallow peanut butter mixture and continue stirring until the cereal is coated in the marshmallow peanut butter mixture.
- Pour and press mixture into prepared pan.
- Let them set for about 20 minutes before cutting.
- Using a sharp knife cut into 15 bars. (3 rows with 5 bars on each row). Store leftovers in an airtight container for up to 5 days
