These Skinny Chocolate Chip Bars are made healthier-using protein pancake mix, eggs, unsweetened applesauce, and sweetened with monk-fruit natural sweetener, vanilla extract, and no sugar added chocolate chips! These make for an easy healthy dessert or even breakfast! via @pounddropper

These Skinny Chocolate Chip Bars are made healthier-using protein pancake mix, eggs, unsweetened applesauce, and sweetened with monk-fruit natural sweetener, vanilla extract, and no sugar added chocolate chips! These make for an easy healthy dessert or even breakfast! 

 

What ingredients do I need to make these Skinny Chocolate Chip Bars?

  • Kodiak Cakes Protein Pancake Power Cakes, Flapjack and Waffle Baking Mix, Buttermilk: you may substitute the Kodiak Cakes Protein Pancake Power Cakes with any high protein buttermilk pancake mix such as:Krusteaz Protein Pancake Mix, Buttermilk – 100% Whole Grain Flour or if you are looking for gluten-free or lower carb option- you can use Simple Mills Almond Flour Pancake Mix & Waffle Mix, Gluten Free. 
  • Eggs
  • Zero point brown sugar substitute: I use Lakanto Monkfruit Golden Sweetener. You can find this online HERE. Get 20% on your order using POUND20. Another great zero point brown sugar sweetener is Sukrin Gold. You can find that online HERE on Amazon. 
  • Baking powder
  • Baking soda
  • Vanilla extract 
  • Unsweetened applesauce: this is used as a substitute for vegetable oil. The unsweetened applesauce could be substituted with pumpkin puree or non fat plain Greek yogurt, if you prefer. 
  • No sugar added milk chocolate chips: I LOVE  Chocozero no sugar added milk chocolate chips or Lakanto no sugar added chocolate chips. They two are my favorite when it comes to no sugar added chocolate chips. These are super delicious and have NO bitter aftertaste! If you prefer dark chocolate you can substitute the milk chocolate for Lily’s Dark Chocolate Chips, Stevia Sweetened, with no added sugar.  You can find those HERE on Amazon.  Note: The overall point value for the bars would be the same for any of these no added sugar chocolate chips.

What else could I use in place of the Kodiak Cakes Pancake Mix?

There are a few alternatives that your can use in place of the Kodiak Pancake Mix such as:

  • Krusteaz Protein Pancake Mix, Buttermilk – 100% Whole Grain Flour 
  • King Arthur Gluten-Free Pancake Mix– as a gluten-free option 

How do I make these Skinny Chocolate Chip Bars?

Preheat oven to 350 degrees. Spray a 9×13″ baking dish with non stick cooking spray. 

In a large mixing bowl combine Kodiak Cakes Protein Power Baking Mix, eggs, brown sugar sweetener, baking powder, baking soda, vanilla, unsweetened applesauce.

Mix until well combined. 

Fold in 1/4 cup chocolate chips.

Press batter into prepared pan- the batter will a bit sticky-don’t worry-that’s totally normal. 

Sprinkle and press remaining 1/4 cup chocolate chips on top.

Bake for 11-13 minutes, or toothpick comes out clean. You don’t want these to overcook or they’ll be dry!

Let cool for 5 minutes before cutting them into 20 equal slices.

How do I store these Skinny Chocolate Chip Bars?

The leftovers can be stored at room temperature for up to 2 days. After 2 days, they will get pretty hard. To keep them fresh- I recommend keeping them in plastic wrap or in an airtight container in the fridge for up to 4 days. Be sure to let them cool down to room temperature before you put them away, and store them in a container or a ziplock bag. 

 These cookie bars will stay fresh in the freezer for up to 3 months. Layer each bar between parchment paper to keep them from sticking.

 

Ingredients:

    What can be used if you do not have the brown sugar substitute. I have the LaKanto Classic white sugar substitute.

      Hi Jerilyn,

      Yes, you can substitute it for the white classic sweetener- I just prefer the nice caramelized/golden flavor the brown sugar sweetener gives these-so if you did have that-that’s the one I’d use.

    Mine turned out not cooked in the middle of the pan. Any thoughts? I used Sukrin gold and Lily’s chips in a 9×13 pan

      You may want to cook for a bit longer if that is the case. Time and Temperatures can vary depending on your oven.

    If I wanted to put PB powder in there as well do you think should I lower the amount of kodiak mix I put in? As in if I put in 1/3 pb powder should I put a 1/3 less kodiak?

      No, you won’t need to lower the amount of Kodiak mix with you use the PB powder. I would though recommend mixing the PB powder with water to make the peanut butter.

      Yes, you can use all purpose flour in place of the pancake mix if you prefer. You will use the same amount.
