What are Buckeye candy?
Buckeyes are a confection made from a peanut butter fudge partially dipped in chocolate to leave a circle of peanut butter visible. Buckeyes are similar to peanut butter balls (or peanut-butter-filled chocolate balls), which are covered in chocolate.
Named for their resemblance to the nut of the Ohio buckeye tree, the state tree of Ohio, this candy is particularly popular in Ohio and neighboring states.

What ingredients do I need to make these Easy Sugar Free Buckeyes?
- Light butter, melted. I like to use “Land O’ Lakes light butter made with canola oil” or “I can’t believe it’s not butter”
- Low point peanut butter– I like to use Better’n Peanut Butter, Peanut Spread. You can get a 3 pack on Amazon HERE. It’s only 100 calories per serving and lower in points than most peanut butters.

- Vanilla extract

How do I make these Easy Sugar Free Buckeyes?
Line a baking sheet with parchment paper. Set aside.
In a medium size mixing bowl, combine the peanut butter, melted butter, powdered sugar sweetener, and vanilla extract.
Mix until all ingredients are completely incorporated. The mix should be soft, slightly sticky, and shiny.
Form balls (about 1 inch in diameter) and place on a baking sheet.
Place the baking sheet in the fridge or freeze for one hour. This will firm up the balls slightly and makes it easier to dip the balls into the melted chocolate. Be sure not to skip this step.
Add the sugar-free chocolate chips into a microwave-safe bowl.

Microwave by 30-second intervals, stirring between each until the chocolate is fully melted. Remove the baking sheet from fridge or freezer.
The balls should be hard on the sides, and a bit soft in the center. If too soft, keep them in the freezer for another 10 minutes.Using your hands or place a toothpick in the center of the peanut butter ball.
Dip the peanut butter ball half way into the melted chocolate using your toothpick as a tool to gently roll the ball into the chocolate. Remove any excess chocolate with the side of the bowl.
Place peanut butter balls back on the covered baking sheet with parchment paper. Repeat the chocolate dipping steps until the buckeyes have been dipped with chocolate.
Place baking sheet in the fridge for 5 minutes to allow the chocolate to set.

Notes:
- You can seal the toothpick hole up once they have chilled by rubbing in some peanut butter filling into the hole.
- Store the balls in an airtight container in the fridge, don’t overlap to prevent them from sticking together.
- These can be stored for up to 2 weeks. I don’t recommend not storing them at room temperature, they can get really soft.
- Freeze in a ziplock bag or airtight container and defrost at room temperature 3-4 hours before eating.
- To prevent them from freezing into a big clump, you should freeze them on a cooking sheet in a single layer first. After they are completely frozen, you can store them in a sealable freezer bag or a freezer-safe container
