Easy Taco Cups

These Easy Taco Cups are delicious, easy to make, are the perfect appetizer, snack, or dinner on taco night!

What makes Laura’s Lean Beef different than other brands of beef?

 Unlike most other “natural” beef, Laura’s Lean product is a “Never Ever” offering, meaning their protein is sourced from suppliers that raise their cattle without ever using added hormones or antibiotics and are always vegetarian fed.

 Laura’s 96% Lean Beef is certified through the American Heart Association heart check program and meets USDA standards for “Extra Lean?”  That means each 4 oz. serving of Laura’s Lean contains less than 10 grams of fat, 4.5 grams or less of saturated fat, and less than 95 mg of cholesterol per 100 grams serving.

What ingredients do I need to make these Easy Taco Cups:

  • 96% Ground Lean Beef: I prefer using Laura’s Lean 96% lean ground beef. You easily substitute it for ground chicken, shredded chicken, or refried beans for a vegetarian option.
  • Taco Seasoning: adds flavoring to the lean ground beef.
  • Rotel Original Diced Tomatoes & Green Chilies: the tomatoes and green chilies adds a nice Mexican flavor to these Easy Taco Cups.
  • Wonton Wrappers: the wonton wrappers are the base for these taco cups. These are a fun alternative to use instead of using tortillas or taco shells. 
  • Tostitos Con Salsa Cheese Dip: You can’t have tacos without cheese, right? Well, using the con salsa cheese sauce takes these taco cups to the next level.  It’s low in points…you can have 2 tablespoons for 1 SmartPoint. However, if you wanted you can use light shredded cheese, if you preferred. 
  • Garnishes: I love to top these Easy Taco Cups with a dollop of fat free sour cream or non fat Greek yogurt, sliced green onions, and sliced black olives.

How do I make these Easy Taco Cups?

First, preheat the oven to 400 degrees.

In a large skillet cooked lean ground over medium heat until browned. Drain, if needed.

Add taco seasoning and stir to combine. Cook for another 2 minutes. Remove from heat. 

Coat a regular size 12 cup muffin tin with non stick cooking spray.

Line each cup of prepared muffin tin with a wonton wrapper.

Place one tablespoon of meat mixture in each wonton wrapper.

Place another wonton wrapper over the top of each taco cup, making sure the edges of the wonton wrapper are slightly off-set from the bottom one.

Add another tablespoon of meat and top with one Tbsp Ro-Tel Diced Tomatoes and Green Chiles.

Bake for 8-10 minutes or edges are golden. Be sure to keep your eyes on them-the wonton wrappers can burn easy.

Remove from oven and top each taco cup with 1/2 tablespoon Tostitos cheese con salsa dip. 

Place back in the oven for 1-2 minutes or until cheese is bubbly. 

Makes 12 taco cups

  • Sour cream or plain Greek yogurt (reduced fat or fat free )
  • Shredded lettuce
  • Green onions, thinly sliced
  • Black olives, sliced

Directions:

  1. Preheat oven to 400 degrees.

  • 1 lb. Laura’s Lean 96% ground beef
  • 1 Tbsp taco seasoning
  • 1 (10 oz.) can diced tomatoes and green chiles, drained
  • 24 wonton wrappers-I use Nasoya wonton wraps
  • 5 Tbsp Tostitos cheese con salsa dip
