French Toast Roll Ups

These French Toast Roll Ups are like mini churros drizzled with delicious caramel sundae sauce. Make these for your next Holiday brunch and listen to all the people rave about how delicious they are!

Servings: Makes 8 roll ups

GREEN: 1 SmartPoint each or 4 SmartPoints for 4 roll ups

BLUE: 1 SmartPoint each or 2 SmartPoints for 4 roll ups

PURPLE: 1 SmartPoint each or 2 SmartPoints for 4 roll ups

 

What wraps do I use for these French Toast Roll ups?

I use Cut Da Carb for these rollups since they are only 2 SmartPoints each and are by far the tastiest low point wrap ( compared to the Flat Out wraps and Josephs lavish wraps) I have ever had. I get them in bulk on their website and freeze/refrigerate them for up to 6 months. You can click on the picture below to go directly to their website. 


What can I fill the French Toast Roll Ups with?

These roll ups an be stuffed with deliciousness or enjoyed with cinnamon and caramel sauce.  Here are a few ideas on what you can add to the middle of these for additional points:

  • Sugar Free Preserves: Raspberry, Strawberry, orange, or blackberry jam. Spread evenly in over the middle of each wrap then roll up. Cook as directed.
  • Peanut butter:  2-3 Tbsp of peanut butter powder or Jif Whips peanut butter in the middle. Spread evenly in over the middle of each wrap then roll up. Cook as directed.
  • Light cream cheese: mix 2 Tbsp light cream cheese with 1 tbsp of your favorite sugar free jam. Spread evenly in over the middle of each wrap then roll up. Cook as directed.

 

I love this Sugar Free Smucker’s caramel sauce for the topping of these roll ups. You can find this at Walmart but the ice cream toppings or also on Amazon HERE.

How do I make these French Toast Roll Ups?

Cut both wraps into 4 equal pieces, making a total of 8 roll ups.

Place about 1 tsp of filling ( if you are adding filling) on each piece of wrap. Repeat with all 8 pieces.

Roll up jelly-style and if needed secure with toothpick. 

In a shallow plate, whisk together eggs, almond milk, vanilla extract until well combined.

In a separate bowl, mix together cinnamon and sugar substitute and transfer to a shallow plate.

Dip each rollup into egg mixture coating well on both sides. Then dip into cinnamon and sugar mixture. 

Spray your air fryer or a skillet with non stick cooking spray. 

Place all 8 roll ups seam down in air fryer or in a prepared skillet.

Cook at 360 for 6-8 minutes or 2-3 minutes on each side if using a skillet.

Serve with sugar free Smucker’s sundae caramel sauce or syrup, for additional points. ( 1 Tbsp for 1 SmartPoint or 2 Tbsp for 3 SmartPoints)

 

Ingredients:

  • 2 low point flat wraps ( I use and love Cut da Carb wraps)
  • 2 eggs, beaten
  • 1 tsp vanilla or almond extract
  • 2 Tbsp unsweetened almond milk or skim milk
  • 2 Tbsp zero point white sugar substitute ( I use Lakanto Monkfruit Sweetener))
  • 1 tsp cinnamon 

Optional Toppings:

  • 2 Tbsp Sugar Free Smucker’s caramel sauce or any other toppings such as: powdered peanut butter or PB2, sugar free preserves, bananas or sugar free pie filling
  • 3 Tbsp fat free Reddi Whip

Directions:

Can you make these without an air fryer?

Yes, you can cook the in a baking dish in the oven at 400 degrees for 10-13 minutes.
