Lightened Up Cheddar Ranch Cheeseball

This Cheddar Ranch Cheeseball recipe is so easy and SO good! It’s lightened up using laughing cow cheese wedges vs. cream cheese and all you need to do is mix together the ingredients and form into a ball!

Makes 16 ( 2 Tbsp.) servings 

What ingredients do I need to make this Lightened Up Cheddar Ranch Cheeseball?

  • Laughing cow cheese wedges– You can use any flavor you like for this cheeseball. I prefer using the Original or the Garlic and Herb flavor for this particular recipe. The laughing cow cheese wedges are the star of the recipe. I use these cheese wedges in place of regular cream cheese to”lighten up” the cheeseball. These cheese wedges have 2g of protein and are only 35 calories per wedge!!
  • Reduced fat cheddar cheese– shredded and divided. I like to use Velveeta shreds. Any reduced fat or fat free cheddar cheese will work for this.
  • Worcestershire sauce– this gives the cheeseball incredible flavor!
  • Ranch dressing mix packet
  • Garlic powder
  • Fat free sour cream or non fat plain Greek yogurt – I love the creamy texture the non fat sour cream or Greek yogurt gives the cheeseball.
  • Green onions– finely chopped.

What are some other cheeseballs I make with this recipe?

  • Bacon cheeseball: add crumbled bacon pieces to the cheese mix. 
  • Jalapeño cheese ball: add chopped jalapeños to the cheese mix.
  • Jalapeño Popper cheeseball: add bacon and jalapeños to the cheese mix. 
  • Pumpkin” cheeseball: add the stem of a green pepper or jalapeño to the top of the cheeseball and you’ll have yourself a pumpkin lookin’ cheeseball.

  • Good Thins– 41 crackers for 3 smartpoints
  • Trader Joe’s Multi Grain Crackers – 14 crackers for 5 smartpoints
  • Good Thins Garden Veggie Crackers– 16 crackers for 4 smartpoints
  • Reduced Fat Triscuits– 6 crackers for 3 smartpoints
  • Snyder’s Mini Pretzels-20 pretzels for 3 smartpoints
  • Veggies such as; cucumbers, carrots, bell peppers, celery

How long does it stay fresh? Can I freeze it?

To store leftovers, simply transfer the dish to an airtight container, and refrigerate for up to 3 days.

This cheeseball can be frozen. Use a freezer-safe dish that is tightly sealed, and freeze it for 1-2 months. It’s better when eaten fresh.

How do I make this Lightened Up Cheddar Ranch Cheeseball?

Place laughing cow cheese wedges into a large mixing bowl.

Beat with a hand mixer until fluffy.

Add non fat plain Greek yogurt or fat free sour cream, ranch mix, 1/2 cup shredded cheddar cheese, green onions, Worcestershire sauce, and garlic powder.

Beat until combined. 

Shape into a ball.

Place cheeseball on a piece of plastic wrap and cover with the entire cheeseball with plastic wrap.

Chill in the refrigerator for at least 2 hours or up to 24 hours.

Remove from fridge.

Spread 1/2 cup reserved shredded cheddar cheese on a shallow plate. 

Unwrap the ball and roll in the reserved shredded cheese. 

Use your hands to cover the entire cheeseball in shredded cheddar cheese.

Place on a serving dish

Serve with your favorite veggie or crackers!

  • 2 green onions, finely chopped, divided 

Directions:

  2. Add non fat plain Greek yogurt or fat free sour cream, ranch mix, cheese, green onion, Worcestershire sauce, and garlic powder. Beat until combined. 
  3. Shape into a ball. Place cheeseball on a large piece of plastic wrap and wrap the cheeseball entirely with the plastic wrap.
  4. Chill in the refrigerator for at least 2 hours or up to 24 hours.
  5. Remove from refrigerator. Spread 1/2 cup reserved shredded cheddar cheese on a shallow plate. 
  6. Unwrap the ball and roll the cheeseball in the shredded cheese. 
  7. Serve with your favorite veggies or crackers!
